Legend has it that in ancient times, there was a temple on Baiyun Mountain in Guangdong Province, called Jiulong Spring. There is a clear spring behind the temple, and the spring water is endlessly sweet. There was a little monk in the temple, mischievous and greedy, who liked to eat pork hand meat since he was a child.
One day the abbot went down the hill to give alms. The little monk couldn't stand the absence of rapeseed in the temple. Taking advantage of the master's absence, he secretly went to the market to buy some of the cheapest pig trotters.
He found a crock pot outside the mountain gate and roasted pig's trotters on a mine stove. The trotters have just been cooked. The abbot returned. The little monk was afraid of being seen by his own pig's hooves and violating the precepts.
So he hurriedly threw the pig's trotters into the clear spring pit behind the temple.
After a few days, he finally hoped that Master had gone out again, and quickly ran to the mountain spring to fish out the pig's trotters, but found a strange phenomenon. These pig hands are not only not sour. Moreover, the little monk put his assistant in a pot, added some salt, sugar, and white vinegar to cook it, cooked it well, and ate it in large mouthfuls. These pig trotters are neither fat nor greasy.
The crust is crisp, the meat is refreshing, sweet and sour. The little monk, it was really surprising and joyful. After that, he not only began to eat meat, but also let other monks fast.
Later, the method of making pottery in the local pig's trotters spread. Because it originated in the foothills of Baiyun Mountain, posterity called it Baiyun Mountain Pig's Trotter. Oops, Guangzhou's Baiyun Mountain pig trotters are now more exquisitely made.
The original local cooking method has been changed to roast pig's trotters, cut into small pieces, boiled and soaked, and pickled. The most elegant Baiyun Mountain, the pig's trotters are white, and the Jiulong Spring of Baiyun Mountain is soaked.
The "Panyu County Chronicle" said that Jiulongquan was the livestock sacrificed by Anqi, so there was no right to take the nine boys and have the courage to do it. Similarly, Confucius Ganong, Song Ming and Dark Seven Classics Kenji Ganpeng have gold stone inscriptions.
Jiulong Spring is rich in minerals, crystal clear and completely smooth. It can be used to soak pig trotters and wash joints to remove grease. It is said that the Shahe Hotel on the outskirts of Guangzhou sells White Cloud Pig Trotters.
