1, lettuce peel, you can also use cucumber, scrape into thin slices with a scraper.

The second course: cold mixed beans
1: Wash and cut the beans into long pieces, add a little oil and salt to the water, add the beans and blanch the water for 2 minutes. Remove the cool water and tear it in half to make it more flavorful. When boiling water, add oil and salt, and after blanching the water, the cool water will make the dish more beautiful and not black.
2. Juice. Minced garlic, chilli rings, salt, sugar, chicken essence, soy sauce, aged vinegar, sesame oil. Pour over the torn beans and stir well.
The third course: cucumber meat rolls
1, pork belly cold water into the pot, add shallots, ginger slices, cooking wine to fishy, cook for 30 minutes on medium heat, can be easily inserted with chopsticks, fished out and cooled, cut into thin slices.
2: Wash the cucumber without peeling, scrape into slices with a spatula and cut into long pieces.
3: Roll up the pork with cucumber slices and place on a plate.
4. Juice. Minced garlic, millet pepper rings, salt, sugar, chicken essence, soy sauce, aged vinegar, sesame oil. Pour over the cucumber pork roll and enjoy, meat and vegetarian, fragrant but not greasy.
Fourth course: cold mix baby dish
1, baby cabbage washed, one by one uncovered. Blanch in boiling water for about 1 minute and blanch until soft. Blanch the shredded potatoes and carrots for 2 minutes until transparent and the vermicelli is soft. Cool off in all the water.
2: Drain the water and tear the cabbage leaves into strips.
3. Juice. Place a spoonful of minced garlic, chopped green onion, paprika, and white sesame seeds in a small bowl. Put a handful of peanuts in a hot pan of cold oil, fry over low heat until the peanuts are red, and pour into a small bowl. Add salt, sugar, soy sauce, aged vinegar and sesame oil and stir well.
4: Pour the sauce on the dish, stir well, and enjoy the food.
Fifth course: cold mix fungus
1: Soak the fungus, wash it, put it in boiling water, blanch the water for 5 minutes, and remove the cool water. Squeeze out the water and put it on a plate, add the minced garlic, chilli rings, green onion and sprinkle with the oil of the fried peppercorns.
2: Add salt, soy sauce, vinegar and sesame oil and stir well, then plate and serve.
Sixth course: cold mixed mushrooms
1: Wash the mushrooms, tear them into strips, blanch in boiling water for 3 minutes, sauté over cold water and squeeze dry. Blanch the leaves for 2 minutes, let it cool, squeeze out the water, tear it into strips, and squeeze the water dry.
2: Put minced garlic, paprika, peppercorn powder into a bowl, fry a handful of peanuts in a hot pan, fry well and pour in the bowl, after the aroma is stimulated, add salt, soy sauce, aged vinegar and sesame oil to taste.
3: Pour the sauce on the dish and stir well. Place in a bowl and press firmly, then buckle upside down on the plate and enjoy.
The seventh way: cold mix of rotten bamboo
1. Soak the bamboo with water in advance, cut into small pieces, blanch the water for 2 minutes, pass the cool water, squeeze the water dry and put it into the basin.
2: Soak the fungus in clean water, wash it, blanch it for 5 minutes, cool it, squeeze out the water and put it in the basin.
3. Juice. Minced garlic, green onion, paprika, peppercorns, millet peppers, pour over hot oil. After the aroma is activated, salt, soy sauce, aged vinegar and sesame oil are added.
4, in addition to the fungus, tofu bamboo, I added a cucumber, pour the juice, stir well.
The eighth way: tear eggplant by hand
1: Wash the eggplant, steam it for 10 to 15 minutes, and you can insert it through with chopsticks. Large eggplant can be cut into sections or halves and steamed.
2: After steaming, tear into strips and place on a plate. Just pour the juice, the juice is the same as above.
The ninth way: cold mix lettuce
Peel the lettuce, cut into plates and cut into slices. Add minced garlic, salt, soy sauce, aged vinegar, chili oil and sesame oil, stir well. After mixing, marinate for 10 minutes, it will be more flavorful.

We can mix a large bowl of universal cold sauce and mix a few cold dishes, which is simple and convenient and delicious.
【Recipe 1】: Minced garlic, green onion, paprika, pour hot oil, salt, 2 tablespoons soy sauce, 2 tablespoons aged vinegar, 1 spoonful of sesame oil.
【Recipe 2】: Minced garlic, green onion, chili oil, salt, 2 spoonfuls of light soy sauce, 2 tablespoons of aged vinegar, 1 spoonful of sesame oil.
【Recipe 3】: Minced garlic, green onion, chili rings, add salt, 2 spoons of light soy sauce, 2 tablespoons of aged vinegar, 1 spoonful of sesame oil.
