⚬ Okara is often seen as the leftover from soy milk, but it's actually a nutrient-dense treasure rich in fiber and protein. Eating it regularly can cause the sugars in the food to adhere to the fiber, which slows down its absorption, and the blood sugar level decreases accordingly. And the calcium content in okara is comparable to that of milk, and it is also easily absorbed. Many people just throw it away, hurry up and collect this recipe to turn waste into treasure~

Okara peppercorns
🧑 🍳 Recipe author: Qianyi Kitchen
🥦 Fees
Okara 200 grams
Flour 150 grams
1 egg
Salt in small amounts
Sichuan pepper powder to taste
Thirteen spices to taste
Paprika to taste
🍳 Method.
1. Beat the soy milk and filter the okara to squeeze out the water with gauze.
* If it is relatively small, you can freeze it in the refrigerator, and you can make it once if you have accumulated 2-3 times of okara.
2. Add eggs, salt, peppercorns, thirteen spices and form a dough, (my flour is softer, and the amount of flour can be increased appropriately).
* If you want a crispy dough, you can add 0.5 grams of aluminum-free baking powder.
3. Divide the dough into 2 pieces, (roll out on oiled paper, it's easier to handle, try to roll out thinner), and then cut into suitable pieces.
4. Put soybean oil in a pot, heat (the oil temperature should not be too high), turn to low heat and fry slowly, and turn it with a colander.
* The pot must be fried over medium-low heat, and it will be crispy after a while of frying.
5. Fry to this level, turn to medium heat, fry until golden brown, and then remove from the pan.
6. Sprinkle with paprika.

I used the air fryer to re-fry the bean dregs pot, which was very crispy. Eggs are indispensable in the recipe.
