I flew to Glasgow, Scotland, in early spring, and from Glasgow all the way north to Speyside, one of the whisky centres. Many years later, I can often recall the spring days in Scotland, with green fields as far as the eye can see, and the precious scenery in my memory is the most familiar childhood routine of the McCarney sisters. The McCarney sisters, sister Mary McCarney, are talented photographers, filmmakers, writers, chefs and cooking show hosts, and sister Stella McCarney is a talented fashion designer who founded her eponymous label at the age of 30. The sisters have lived on Scottish farms since childhood, and nature is their best playmate. Nature is also part of The Macallan's DNA and beliefs, and The Macallan Distillery is located on the Speyside River, surrounded by greenery, and is one with nature. Newly completed a few years ago, the winery is 95% energy recycled, reinforcing the brand's core philosophy of sustainability.
Perhaps based on this, we have seen a rare cross-border cooperation. The Macallan Green Morning Leaf box is printed with Mary's artwork for The Macallan Estate, and the box and bottle label are made from discarded grass from the grass, making a unique exploration of the reuse of natural waste. More than 10 years ago, when I first entered the wine industry, I tasted The Macallan for the first time in 12 years at a dinner party called by my seniors. Rich, fruity, full-bodied, with dried fruits, vanilla, cinnamon and toffee on the palate as delicate and complex, the flavours of The Macallan's signature sherry casks have been my favourite ever since. And the Macallan Green Morning Leaf in front of me, from the moment it smells, it shows a "different" quality.
On the first palate, the nose is fresh and fruity, with fresh lemon and a delicate creamy vanilla aroma that begins to emerge as the wine wraps around the palate, delicately balancing the pleasant sweetness with the acidity of the previous lemon. Take another sip and this time you can feel the warm, woody flavor, followed by a nutty aroma that is light and soft, bright and delicate. When the wine crossed the tip of my tongue, I could clearly feel the transparency and exuberance of a spring day.
It's no exaggeration to say that The Macallan's new creation is once again a new way of thinking about whisky, and to develop this fresh and rich flavour requires the distillery team to stand on the shoulders of giants.
I've always liked to use the shoulders of giants to describe The Macallan's long heritage of winemaking. At The Macallan Distillery, the ultra-small pot stills allow the wine to get the most out of the copper surface and bring out the fuller and deeper aromas of the new wine, the original heart is selected to bring out the signature fruity aroma and viscosity, and the cooperage's insistence on aging in high-quality sherry casks throughout, and the intergenerational transmission of exquisite craftsmanship gives the wine a mysterious, lively and elegant personality that is intriguing. Together with The Macallan Estate, a spiritual home in symbiosis with nature, and the absence of any artificial caramel colours, these two characteristics form the six pillars of The Macallan's spirit, which are the cornerstone of the exquisite quality of every bottle of The Macallan.
On top of this, the brand's winemaking team often has inspirations, such as drawing inspiration from the Scottish alpine meadows to create a wine that is closely connected to spring. The floral, vanilla, and fresh oak flavors of the bourbon barrel are combined with the rich aromas of citrus fruits and the taste of toffee given by the sherry barrel, creating a symphony of spring between the mouth and nose.
My girlfriend often asks me, can you really taste so many flavors? To be honest, wine appreciation is indeed a gradual process, and sometimes different ways of tasting it will have different results.
For example, in the serious wine tasting occasion, I like to order water, the intervention of water molecules is like an active medium, and those aromatic factors will become active and jump under this stimulus, and a force will pour into the tip of your nose. But in a relaxed drinking game, I prefer a large ice hockey ball that holds the wall of the glass, locking the aroma of the wine tightly together with the coolness, and getting double the smoothness in the mouth.
It's not that I haven't added tonic water to The Macallan, I've paired cigars out of curiosity, and when it comes to food, I can use it to all kinds of cuisines, and at this time, I usually don't try to taste how much flavor I drink, but I do everything to my appetite. Just like right now, we've paired The Macallan Green Morning with a Garden Salad, a Ham Fig Platter, Shrimp Flakes and a dessert praline sorbet, each with a different flavour twist and each bite goes off to perfection.

As winter turns to spring, The Macallan Extraordinary Series, as a sister chapter, highlights the relaxation of spring with different shades of green, and the flavor is sweet and smart.
At this moment, I suddenly understood why this wine was named Cuilu Chenyi. Chenyi represents vigor and vigor, and Yi means elegant and fresh, which happens to be the most beautiful gesture of spring, especially from a delicate female perspective.
