Rat qu glutinous, also known as autumn chrysanthemum cake, is a unique snack in eastern Fujian. It has been circulated since the Kangxi period and has a history of several hundred years. After the spring equinox, during the Qingming Festival, there is a custom of eating rat koji in many places in eastern Fujian, and the same is true for Xiapu.

In spring, the fields of Kasumigaura grow a herbaceous plant with slender stems and leaves, small yellow flowers, and thick white cotton hair. This is the rat koji grass, the main material for making rat koji glutinous, and the people of Xiapu also call it "autumn chrysanthemum". During the period from early spring to Qingming, rattle grass is the most tender and most suitable for eating. The rat koji made in this season is particularly delicious.

Wash the tender rattle grass and blanch it in boiling water to remove the astringency. Scoop up and wring out the water, chop into finely minced pieces and set aside. The japonica rice is steamed, mixed with the finely minced rattle, and beaten in a stone mortar until the ingredients are fully combined. Add glutinous rice flour and knead into smooth lumps. Use your hands or mold to gently press the lump into a flat round cake of equal size, and a rattle cake is ready.

Put it in a pot and steam it, and then serve it when it is cooked through. When eating, it can be heated in a steamer or fried in oil, steamed soft and glutinous, and fried in oil is crispy on the edge, tender on the inside, and delicious in the mouth. The people of Xiapu like to eat rat koji glutinous rice with white sugar, and there is also a way to eat it with fish sauce. One sweet and one salty, both can stimulate the fragrance of rat koji.
