To prepare spicy jerky and spicy jerky

Spicy jerky

Ingredients: 1000 g of refined pork.

Ingredients: 100 grams of white sesame seeds, 40 grams of salt, 20 grams of sugar, 20 grams of rice wine or cooking wine, 20 grams of light soy sauce, chili noodles, pepper noodles, sesame oil or pepper noodles.

Preparation steps:

1: Wash the lean pork and cut it into about 3-4mm slices with a knife.

2: Put the sliced meat into the basin, then add 40 grams of refined salt, 20 grams of sugar, 20 grams of rice wine, 20 grams of light soy sauce, grasp and mix well by hand, marinate for 30-40 minutes.

3. Dehydrate the marinated meat slices:

(1) Use the oven method: adjust the oven to the hot air temperature of about 60-70 °, put the meat slices into the baking pan, bake for a few hours, and easily break the section by hand.

(2) Iron pot method: If there is no oven at home, you can use the iron pot to bake dehydration.

Place the marinated slices of meat on a grate, preferably with a layer of oil-absorbing paper, to prevent sticking and grease from dripping into the pan and smoking.

Once laid, put the grate in a dry pot, cover it and bake it over low heat until it can be easily broken by hand.

4: Sauté the white sesame seeds in a dry pan until dehydrated while baking the slices of meat, stir-fry until fragrant and set aside.

5: Place the sliced meat into the steamer basket and steam for 30 minutes on high heat.

6: Put the steamed slices of meat into the basin and mix well with chili noodles, sautéed white sesame seeds and sesame oil to make the spicy jerky.

Note: You can add peppercorn powder or sesame oil and rattan pepper oil to make spicy jerky according to your preference. When making it, you can choose lean meats such as pork tenderloin and hind leg meat.
