Taking a farmer's market in Hangzhou as an example, the price of crayfish at the end of March this year was reduced by 60% compared with the same period in 2023, and the price of Hema fresh fresh crayfish was reduced by as much as 4% after only one month on the market (there are certain differences in stores in different regions).
At the same time as the price of crayfish rolls has been reduced, many questioning voices have also come, such as "crayfish have fallen out of favor", "sales have fallen off a cliff", "Generation Z doesn't like to eat crayfish anymore", "crayfish restaurants in many places have closed down". According to the statistics of 21 Data Journalism Lab, in the past few years, many star startups and brands in the crayfish track have received multiple rounds of financing of more than 10 million yuan, and now they have also collapsed, or transformed and closed down, or have been operating abnormally.

According to official disclosure data, in 2022, the output value of the tertiary industry of crayfish, which is dominated by catering, has reached an astonishing more than 300 billion yuan, accounting for nearly 70% of the scale of the entire industry. In 2023, the total output value of crayfish is expected to exceed 500 billion yuan, and the aquaculture output will exceed 3 million tons.
