Fish sausages in the popular market, have you ever eaten?

□ Jia Jiao Special correspondent Lan Zitao

On January 12, at the vegetable market in Yumu Town, Dongxing District, Neijiang City, the stall of Tang Changfen, a villager in Yuechi Village, was surrounded by curious citizens, and everyone talked about the fish and sausages in front of them.

Tang Changfen, a 53-year-old native of Yuechi Village, returned to her hometown in February 2010 to build more than 70 acres of ponds for specialty aquaculture such as yellow spicy ding and Chinese rouge fish after many years of fish trading. Due to diligence and hard work, in just a few years, Tang Changfen explored a set of his own breeding experience, became a well-known local "Tang Sanjie", and also established the Tang Sanjie Aquaculture Professional Cooperative.

Bestsellers became slow sellers

In 2019, Tang Changfen saw that the red sand fish, one of the three famous fish in the Yangtze River, was selling well in other places and the sales price was also high, so he took the red sand fish as the main breed of the cooperative. Who knows that the weather is unpredictable, just when the red sand fish should be listed in large quantities, the new crown pneumonia epidemic suddenly broke out, a large number of restaurants closed their doors, and Tang Changfen's red sand fish was not cared for at all. The pond should have been listed more than 50,000 pounds of red sand fish also grew bigger and bigger, and when the local epidemic situation improved, the most popular red sand fish that was originally more than one pound per kilogram had grown to several pounds, "I took a few red sand fish to the market to sell, and did not sell them for two days, everyone said that this fish was too big like ornamental fish, and they did not dare to buy it." ”

The original best-selling goods suddenly became slow-selling products, and Tang Changfen was anxious but helpless.

Red sandfish "transform" into sausages

How to turn crisis into opportunity? In Tang Changfen's view, if you want to break the situation, you can only decide the way out by opening your mind.

At the beginning of November 2020, as the double festival approached, the annual flavor became stronger, and there were pork sausages on the market. "How about using fish to make sausages?" Tang Changfen had a sudden idea, and immediately took two red sand fish to try.

A week later, Tang Changfen's fish sausages were dried and had a unique flavor.

"This sausage is delicious and the meat is soft!" Tang Changfen brought the cooked fish sausages to the farmers in the wet market to taste. "People who have tasted it immediately bought red sand fish, and each of them bought more than 40 pounds." Speaking of the experience of selling fish and sausages for the first time, Tang Changfen smiled and closed his mouth.

The red sand fish transforms into a fish sausage and receives unanimous praise. Since then, Tang Changfen has insisted on boiling one or two pounds of sausages every day to bring to the citizens who come to the market to taste. Soon, Tang Changfen's "fish sausage" became famous, and many citizens came to buy it every day. "At most, someone bought 142 pounds at once!" Tang Changfen proudly said that at the beginning, 20 or 30 kilograms of fish sausages were fed every day, and now an average of more than 100 kilograms per day is now fed.

The unique taste has become the new favorite of the market

"I have been pouring sausages here for more than 10 years, pork, lamb, rabbit meat, chicken have been filled, fish meat is still the first time, the process and the process of filling pork sausages is generally the same, the difference is in the taste of the preparation." Zhu Li, a helper hired by Tang Changfen, told this writer. "The taste is constantly being modulated day by day, which is my unique secret recipe." For the delicious secret, Tang Changfen just smiled and did not want to say more.

Fish sausages are divided into spicy and cantonese flavors. In terms of taste, everyone still prefers spicy taste, and cantonese flavor is rarely filled, "From the end of November last year to now, about 5,000 pounds of fish sausages have been irrigated, and only two people have poured Cantonese." ”

"In terms of price, in general, the price of fish sausages is 30 yuan per kilogram, which is nearly three times the price of fresh fish." Tang Changfen explained that from fresh fish meat to sausages, the weight will be reduced by about half at first, plus condiments and other costs, the cost can basically be calculated. For this price, Huang Jia, a citizen who came to buy New Year goods, felt that it was very "worth it". "Only 30 yuan a catty, this price of fish sausages is not expensive." Huang Jia said.

"In the next step, I will also develop a fish sausage with a better taste." For the future development, Tang Changfen is full of hope and confidence.
