Because of its short production cycle and low production cost, Branqu liquor once occupied a large share of the liquor market. However, bran koji wine also has limitations, the koji made of bran as raw material produces less aromatic substances, and the brewed bran koji wine has a thin aroma and a single taste, and usually needs to add the aroma substance Titian, so bran koji wine is gradually disliked by people.
Special song, first song, second song
It is a distinction between the quality of the finished wine of Daqu, strictly speaking, this is a specific grading method belonging to the old cellar in Luzhou. When distilling liquor, it is necessary to pinch the head and tail to take the middle wine, that is, the first and last distilled wine is to be thrown away. According to the order of taking the wine, it is divided into special songs, first songs, and two songs. The new wine must go through a certain period of cellaring or cave storage, which stipulates that the cellaring time of the special qu is not less than three years, the cellaring time of the first qu is not less than one year, and the cellar time of the second qu is not less than half a year.
In general, the quality of the special song, the first song, the second song, and the three songs are decreasing in turn, in fact, the special song, the first song, the second song, and the three songs are all big qu wine. The simple understanding is: the head song generally refers to a piece of wine, that is, the better kind; Special songs are better than head songs; Erqu is the second section of wine, which is slightly worse than the first song.
