HINCH Shinzaki Distillery

Hinch Distillery, located on the beautiful Killarney Estate south of Belfast, Northern Ireland, was founded in 2016 by entrepreneur Dr. Terry Cross and officially put into production in 2020, producing Irish whiskey and gin.

The name "Hinch" comes from the Irish word for "Ballynahinch", which means "the town of the island". County Down, where the winery is located, is located in the Ulster province in the northeast of the island of Ireland, just 20 miles from Scotland.

The natural source of water for making whisky comes from reservoirs in the secluded valleys of the magnificent Mourne Mountains, a natural area of the island of Ireland that has not yet been exploited by modern technology, and the water quality is extremely pure, making it the ideal source of water for making whisky.

Barley raw materials are selected from ireland and Scotland with high amylase content of superior varieties. The winery has two brewhouses for a richer wort and a traditional Irish brewing process.

This is followed by three retorts using the pot distillation technique of Irish whisky classics. The latest distillation facilities have been specially designed to better handle the reflow process, allowing steam and copper walls more time to interact to create a more recognizable flavor profile.

The resulting whisky is richer and more aromatic, fuller and smoother, not only with the pleasant characteristics of classic Irish whiskey, but also with the unique and bold personality of The Simzaki Distillery.

Chief distiller Aaron Flaherty has worked for many years at Bushmills Distillery and in Scotland's Whisky Distillery and has extensive experience in whisky production and mastery of blending skills.

The distillery currently has the largest number of single barrels of high vintage whisky in Ireland and selects a large selection of high-quality oak barrels to age the new wines. It is also equipped with its own bottling line.

In March 2021, the winery's visitor centre was officially inaugurated, which contains bars, restaurants, cafés, outdoor courtyards, event spaces and retail outlets, and can accommodate around 100,000 visitors a year.

Visitors will visit the winery in all directions, learn about every aspect of production, further appreciate the long history of Irish whisky, experience its classic culture, taste the whisky and gin produced by the distillery, and have the opportunity to participate in the production and bottling of their own gin.

The founder, Dr. Terry Cross, is keen to build The Shinzaki Distillery into a forward-thinking new distillery – including a focus on sustainability and the effective implementation of corporate social responsibility, with careful consideration of the impact on its winery team, customers, suppliers, communities and the natural environment.

As a result, as much local materials as possible are procured during the construction of the distillery and in subsequent production operations, and as the winery and visitor center develop, we recruit diverse talents from around the region to provide more employment opportunities for the local area while building a stronger, more united and more supportive community.

Xinqi Distillery is proud of its hometown of Tang County, and also hopes that it can give back to its hometown and become the pride of its hometown.
