Founded in 1671, It has a history of 351 years. The ancestral home of the Zhao family is Shaoxing, during the Kangxi Dynasty, the old two families of the Zhao family came to Baofu with their young sons from Beijing's Goldfish Hutong to settle down, and chose the northeast corner of the erdaokou of West Avenue under the locust tree as a foothold, and gradually formed a paving surface. A lush ancient locust shades most of the sauce garden, and because it expects to buy and sell like the ancient locust, it will be named "Locust Mao". In 1901, Cixi passed through Baoding, tasted the Huaimao pickle and even claimed to be good, and gave the name "Taiping Cuisine", which means "the world is too peaceful".

The Zhao family has made every effort to expand the sauce industry over the generations, and the ancestors have entered Beijing many times to exchange skills with the "Six Must Ju", and have also specially gone to Jinan, Linqing and other places to hire teachers to learn from the strengths of the family. From the original assortment, eight treasures and the like, it has increased to more than 40 kinds. I heard that the shrimp oil cucumber in Northeast Jinzhou is well-known for its quality, and Huai Mao spared no expense to lead vegetable farmers to Jinzhou to learn to plant, and the cucumbers grown into cucumbers taste delicious.

The production of Huaimao noodle sauce is fully natural fermentation, long cycle, high reducing sugar composition, so Baoding noodle sauce is called sweet noodle sauce. Driven by Huai mao, Baoding sauce industry gradually developed. In 1924, the Baoding Sauce Industry Union joined 81 sauce gardens, with more than 20,000 large tanks, and an annual production of 1.6 million kilograms of noodle sauce and 2 million kilograms of pickles. There are more than 80 kinds of products in Huaimao.

In 2014, Huai Mao established the strategic idea of developing into a "domestic sweet noodle sauce industry standard setter", and invested in the establishment of a new factory in Dingxing County through independent innovation and the introduction of international advanced equipment to create a fully automatic sweet noodle sauce production line. In 2017, the production base of sweet noodle sauce with a production capacity of 100,000 tons was officially completed, forming a modern R&D production base with sweet noodle sauce as the core and pickles, soy sauce, vinegar and other condiments as one.

The ancestors and teachers of the Huaimao Zhao clan have constantly innovated products, and their cultural heritage has been precipitated with the times, worthy of a treasure of the ancient city's food culture.
