  Kit: Rapid detection

  "The Olympic Games, an international large-scale event, has very high requirements for food safety, so it is necessary to quickly and accurately identify suspicious foods and timely risk warning." Researcher Xu Jin, head of the norovirus rapid detection kit of the National Food Safety Risk Assessment Center, said that autumn and winter are the high incidence of foodborne diseases in the mainland, and water sources and food are important vectors for the transmission of norovirus. To this end, the team, together with the Chinese Center for Disease Control and Prevention, the Chinese People's Liberation Army Military Medical Research Institute, Tianjin University of Science and Technology and other 10 units, jointly undertook the "Science and Technology Winter Olympics" key special project "Winter Olympics Food Supply Chain Harmful Factor Intelligent Fast Screening Technology and Prediction and Early Warning Technology Research" project, and successfully developed norovirus rapid detection kit and other achievements.

  Based on the patent applications of "Primers, Probes, Isothermal Recombinase Amplification Reaction Kits and Methods for Detecting Botulinum Toxin Gene E", "A Solid Surface Microbial Sampling Method" and "A Solid Surface Microbial Sampler", the team optimized the rapid detection technology program of norovirus after repeated experiments. The norovirus rapid detection kit developed by the team can detect norovirus results within 4 hours in food and water sources, and detect feces in diarrhea patients for 30 minutes, which is much shorter than the 12-hour inspection cycle of the national food safety standard, and does not require complex instruments and equipment.

  During the Winter Olympic Test Games, the team applied this rapid test kit to test a number of Winter Olympic feeding units. The test results show that in more than 100 samples, the accuracy of the norovirus rapid detection kit is no different from the national standard, which meets the needs of the Beijing Winter Olympic Organizing Committee for rapid detection of norovirus. In addition, the team used two other innovations to demonstrate the testing of related foods in three divisions, all of which met the requirements for fast and accurate testing. Among them, the Pseudomonas cocos nucleic acid detection kit can detect Pseudomonas cocos poisoning in foods such as fungus and potato products within 1 hour; rice yeast acid colloidal gold test strips can be used for on-site rapid detection of rice yeast acid in fermented products, starch and other foods.

  "Chang'an Chain": Food Traceability

  Food traceability is a key part of food safety assurance for the Winter Olympics. Beijing Microchip Blockchain and Edge Computing Research Institute (hereinafter referred to as Microchip Research Institute) has created a food safety traceability system for the Winter Olympics to realize that the source of food and raw materials "from farmland to table" can be traced and the destination can be traced. Up to now, Microchip Research Institute has submitted a number of invention patent applications such as "Blockchain-based Trusted Service Scheduling Method, Device, Equipment and Storage Medium", "Smart Contract Special Chip Device and Execution Method, Blockchain Node Device" to help trace the origin of Winter Olympic food with science and technology.

  "The system is supported by the blockchain hardware and software technology system 'Chang'an Chain', using a self-developed encrypted anchored ultra-miniature trusted chip, which is integrated with the food of the Winter Olympics, and can collect food-related information and send it to the blockchain platform for electronic traceability." According to the relevant staff of Microchip Research Institute, based on the encrypted anchoring technology of ultra-miniature trusted chips, after the food is perceived by NFC on the electronic terminal, the system can monitor the temperature and humidity of the food in real time.

  It is understood that the "Chang'an Chain" is led by microchip Research Institute, independently designed from 0 to 1, and developed a modular, assemblable blockchain open source technology architecture. Based on the "Chang'an Chain" technology, the Winter Olympic Food Safety Traceability System can provide an access mechanism for participating entities, and through privacy protection strategies such as data addition and decryption authorization, the traceability information can take into account data privacy and regulatory requirements when using it.
