This morning, the Naxi Sandianshui Traditional Catering Skills Training in the Ancient City District, sponsored by the Federation of Returned Overseas Chinese in the Ancient City District, was held in the Wuyi Community of Dayan Street, and nearly 100 people, including returned overseas Chinese, overseas Chinese dependents, community residents, and Laili tourists, gathered in the courtyard to learn and experience the traditional food culture of the Naxi ethnic group.

The Naxi Sandi Water has always been the highest hospitality ritual of the Naxi people, named because of its complex situation such as the multi-stacked waterfalls of the mountains, and the stacks of waters that give people a feeling of being overwhelmed. When I saw the table full of dishes in front of me, my heart was even more shocked.
Sandian water, as the name suggests, is divided into three dishes, each dish contains multiple dishes, and the choice of ingredients is also very rich, from 1000 meters above sea level to 4000 meters above sea level. The first stack is desserts, which means to welcome guests from all over the world, including Naxi traditional preserves, Naxi mooncakes, colorful candies, etc.;
The second stack is cold dishes, fried dishes, meaning Naxi fine wine to toast guests, there are chicken bean cold powder, Tacheng blowing liver, golden dumplings, etc.; the third stack is Naxi traditional hot pot, hot dishes, meaning that distant guests please stay, there are willow steamed pig head, riverside spicy, Sixi big red meat and so on.
In addition to introducing the origin of Naxi Sandi water and the characteristics of each dish, the scene also carried out production skills training in 4 groups, and everyone also experienced the deep connotation of Naxi cuisine in the process of hands-on work.
The staff of the Federation of Returned Overseas Chinese in the Ancient City District also said that similar activities are carried out in order to be able to better and more widely inherit the traditional culture of Naxi, and diet is an important part of it.
"I remember when I was very young, whenever any family did a happy event or a birthday party, it would use three stacks of water to entertain guests, which was the highest hospitality of our Naxi people."
Grandma Zhao Zhenlian, 60 years old this year, is an overseas Chinese dependent, her daughter has been living and working in France for 7 years, although thousands of miles apart, she feels that the family's feelings are not indifferent, but have become closer.
She either adjusts the layout on the table, or holds the mobile phone to record the lively moments of the scene, and her face is always full of smiles, she said that she wants to tell her daughter from afar what she has seen and heard today, so that she can also feel the national culture of her hometown in a foreign country.
"I am very happy to be able to participate in today's event, the atmosphere is also very good, not only can let the overseas Chinese compatriots understand the Naxi culture, have a sense of belonging, but also can carry forward the Naxi food culture very well, I also hope that through such activities can retain the roots of the Naxi ethnic group and the soul of the Naxi ethnic group."
Mr. Tao Kuang Zheng, an overseas Chinese from Singapore, is also very satisfied with today's event, in his view, this is a very valuable experience, you can get up close and learn to make Naxi traditional food, warm and meaningful.
"If it weren't for witnessing it today, I wouldn't have known that the Naxi cuisine could be so rich, and every dish is worth appreciating, which makes me feel very proud."
