Preserved peach is a fresh peach, processed by multiple processes, the finished product is half a flat garden shape, light yellow, milky yellow, light green or emerald green, translucent, full of flesh and soft glutinous, sugar penetration is even, sweet and sour, with peach flavor.
The strain uses hard flesh white meat peach or yellow meat peach as raw material, and the ripeness should be about 70% (that is, when the peach color just turns from green to white), the fruit shape is rich and full, and there is no disease and insect moth damage. If you choose green fruit, the color is emerald green after drying, if it is sunburned, it is dark green, and the quality is extremely poor. It is made by the following processes:
Peeling - rinsing - finishing (splitting, pitting) - first sugar boiling - sugar staining - second sugar boiling - sugar collapse - third sugar boiling (adding citric acid) sugar stain baking - finished product
Quality requirements: showing the above product shape, bright color, slightly transparent, fruit-shaped neat without impurities, no sugar return, non-stick hands, sugar content 60 ~ 65%, water content 18 ~ 22%, sulfur content does not exceed 0.2%.
In the finished product feeding per 100 repulsions: 250 kg of fresh peaches, 65 kg of sugar, 0.5 kg of citric acid.
