The Yellow River carp is one of the best products, and the price in the market is higher. But what is strange is that the Yellow River carp, which is delicious in the north, is not a rare thing in the eyes of the residents of the south, and very few people will buy it. There is a very interesting thing, in the past in the Danjiangkou Reservoir, through fishing, you can distinguish whether it is a southerner or a northerner, and most of the people who specialize in carp fishing are northerners, and most of them are southerners who fish for their mouths and grass carp.

Although the Yellow River carp is famous, in fact, the phenomenon of fish mixing is very serious. Folk define the characteristics of the Yellow River carp as: golden scales and red tails, long body shape, no earthy smell, tight flesh, and the Ministry of Agriculture has also specially formulated the industry standard for yellow river carp.
The problem is that only a quantitative description of the appearance of the Yellow River carp is made, and the place of origin is not specified, which means that as long as it meets this appearance, it can be called "Yellow River Carp". Trouble comes, there are too many carps that meet this appearance, Shaanxi, Gansu, Henan, Shandong, including Inner Mongolia have played this sign of the Yellow River carp, but in the end who is the real Yellow River carp, the northerners can not distinguish, the southerners do not understand the Yellow River carp.
First, because of the growing environment, the southern carp has a poor taste compared to the northern carp, with loose flesh and heavy fishy taste. This may be related to the higher temperature in the south, in the north carp winter is basically close to the "hibernation" state, and the south even three or nine days can catch carp, so the growth cycle of carp in the two places is different, the same size of carp, the south may only need 1 year to grow, the north needs 2, 3 years, then the natural taste is different.
Second, the north and south eating habits are different, compared to the north, the south, especially Hubei, Hunan, including the west of Sichuan, Guizhou and other places, the taste is extremely heavy, I came to Wuhan to live for 4, 5 years, so far can not adapt to a lot of dishes, not to mention the red oil hot pot, is a bowl of beef powder in the morning have a lot of condiments, often cause me diarrhea. And our inner Mongolian taste is very good hand-grabbed meat, I invited friends in Wuhan to eat together, they think it is too dull. Therefore, carp is not suitable for a large number of condiments, and it is easy to understand that there is no market in the south.
Third, the south is rich in fish species, bluefish, grass carp, bream, cocked mouth, red tail, mandarin fish, mandarin fish, mandarin fish, etc. are countless, not to mention expensive knife fish, rouge, etc., the choice is very large, compared to these fish species, carp appears to be nothing special, which I think may be a very important reason why southerners do not eat carp.
