On 28 October, after a month of waiting in the clear Mediterranean waters of eastern Spain, fishermen carefully lifted bluefin tuna out of their cages. Shocked when it was revealed that it really weighed, 353 kg! After testing, this bluefin tuna has an oiliness of 63, which means that its flesh is quite fat, and the title of "Fish King" is well-deserved.

In order to ensure the freshness of the fish, the fishermen loaded into the cryogenic box according to the operation process as quickly as possible to ensure the taste of the fish. On October 31, Beijing time, after the whole cold chain, the tuna arrived safely at Shanghai Pudong Airport. After completing the procedures such as entry-exit inspection and quarantine, nucleic acid testing and customs declaration, it is transported into the professional low-temperature preservation warehouse of China International Tuna Trading Center in Changxing Island for secondary sterilization and quality maintenance.

This tuna weighs 353 kilograms and is nearly 3 meters long, which is the largest bluefin tuna that has entered Shanghai in history, and it is also the largest one in previous EXPO, weighing 200 kilograms more than the bluefin tuna of the first CIIE.

In the spot trading floor of the China International Tuna Trading Center at room temperature of 0-4 degrees Celsius, before each ice change, the staff was fully armed to kill the venue.

Subsequently, the tuna is removed from the freezer of zero degree preservation, and after a full body "physical examination" of the tuna, it is put into another custom foam box, and the fresh crushed ice is laid layer by layer to maximize the freshness of the tuna. This process is repeated twice a day, and each ice change consumes nearly 1 ton of crushed ice.
