1, Beijing - bean juice

Bean juice is a unique traditional snack in old Beijing, and many foreign friends will think that it is similar to soy milk when they see the literal appearance of bean juice.

But in fact, bean juice is the product of the scraps used to make mung bean noodles. The juice produced by the old Beijingers by fermenting the remaining mung bean residue is the bean juice.

Bean juice has the effect of nourishing the stomach, detoxifying and clearing the fire. But the first time you drink bean juice, the swill-like smell makes it difficult to swallow, pinch your nose and drink it twice, the feeling is different. Some people can be addicted, looking for it everywhere, and they have to drink in line.

In the old days, the bean juice in Beijing was sold on a pickle, with bean juice on spicy pickles and scorched rings, and the poor would break the stickers and soak them in the bean juice, which was a meal. However, I personally recommend that foreign friends who are exposed to bean juice for the first time be cautious, and the taste of the first bite may be beyond your imagination.

Pot side paste, also known as Dingbian paste, is a Fujian specialty snack that originated in Fuzhou, and is also a local breakfast product.

It is made of clam juice as a soup, boiled in the pot to take its umami taste, and then the ground rice milk is poured along the edge of the pot in a circle, the rice milk is blanched into a dry skin on the edge of the pot and scraped into the soup with a spatula, adding celery, green onion, dried shrimp, dried cooked fish, small intestine, flower clams, shiitake mushrooms, cabbage, etc. as condiments, after boiling, the pot is a pot of boiling hot "pot side paste".

From a point of view that northerners can understand, the pot side paste is very much like a bowl of seafood-flavored slice soup.

In addition to Fuzhou, Zhangzhou and Gutian also have local pot side paste, mainly because the soup and the ingredients in the soup are different.
