Water turtle is the name of tea, which is a semi-fermented tea and is one of the "four famous clusters" of Wuyi rock tea. It is produced on the half cliff under the Gezhai Peak of Niulan Kengshe in the Wuyi Mountains. There is the sweetness of Tieguanyin, and the fragrance of green tea, which has the characteristics of freshness, sweetness, elegance and aroma, and is a treasure in tea. It is so named because the tea leaves are thick and shiny like a golden turtle. The shape of the water turtle is fat and strong, naturally loose, and the color is greenish brown and oily. The inner aroma is long and clear like plum blossoms; the taste is thick and sweet, lubricated and refreshing, the rock rhyme is obvious; the soup color is orange and yellow; the leaf bottom is thick and even, and the red edge is cinnabar.
The leaves of the water turtle stretch outward horizontally on the branches, averaging about 7.2 cm long. The leaves are oblong oval in color, emerald green in color, and glitter in the sun, like a water turtle. Most of the leaf surfaces are slightly raised, and some are flattened. The edges of the leaves are flat or have fine ripples. The tip of the leaf gradually becomes sharp or sharply pointed. In addition, the water turtle has leaf teeth, shallow and fine. Some of the leaf teeth are very sharp. In general, the leaves of the water turtle are thick and brittle, and the fresh leaves can be broken by hand.
The biggest difference from other species is that the buds of the water turtle are thick, yellow-green in the sun, less hairy, and shorter internodes. After November every year, the water turtle tea plant will bloom, the corolla diameter of 3.8cm, 7-8 columns. The stigma of the flower is slightly longer than the stamens and has 3 lobes.
The bud leaves of the water golden turtle are very fertile. In spring, the garden is full of tea buds, and the buds and leaves are very dense. The newly grown leaves are very tender and do not age overnight. In addition, this tea has strong drought resistance and cold resistance, strong reproductive ability of cuttings, and a high survival rate. The suitable harvesting period for spring tea is in early May every year, mainly two or three leaves. The tea leaves are green and brown in color, rich in taste and sweet, "rock rhyme" is prominent, and the aroma is high and refreshing, like the fragrance of plum blossoms.
