Prepare the materials
15 small yellow croakers, 90 grams of shrimp skin, 70 grams of peanut oil, 4 to 5 small pieces of green onion, 1/2 teaspoon of cumin, 2 garlic cloves, 3 to 4 slices of ginger, 3 slices of fragrant leaves, 1 tablespoon of peppercorns, 3 star anise, 20 grams of sugar, 15 grams of cooking wine, 30 grams of light soy sauce and 30 grams of water

Start making
1. Wash the small yellow croaker, remove the scales and internal organs, and cut off the head.
2. Lay the small yellow croaker flat in the frying basket and brush the surface with a thin layer of oil. Air fryer 200°C preheat for 3 minutes, bake in a frying basket for 14 to 15 minutes and then remove from the pan. The grilled fish has a complete surface, a crispy texture, and is more fuel-efficient and complete than fried.
3. Pour oil in a wok, heat over low heat, add shrimp skins over low heat and fry slowly, turn off the heat when the shrimp skins turn golden brown, remove the shrimp skins and take the shrimp oil.
4. Mix soy sauce, cooking wine and water in a bowl to form a sauce.
5. Heat the shrimp oil prepared in step 3 in the pot, add star anise, peppercorns, fragrant leaves, cumin and stir-fry, then add green onion, ginger and garlic and fry until fragrant.
6. Pour in the sauce, add sugar, simmer until boiling and then cook for 2 to 3 minutes, turn off the heat when the soup becomes thicker.
7. Use a strainer to filter out all the ingredients, leave only the soup, when the soup is cooled, pour into the fried yellow croaker, so that the soup can evenly wrap each fish, then cover with plastic wrap, refrigerate and marinate for more than 12 hours.
Tips:
1. The fried shrimp skin is very fragrant, you can eat it directly or as a cold dish.
2. Because everyone's taste is different, you can taste the smoked fish sauce and add salt or sugar according to your preference.
3. The prepared smoked fish does not need to be heated and can be eaten directly.
