Suqian, located in northern Jiangsu Province, is the youngest prefecture-level city in Jiangsu Province, also known as "Water City", sitting on the two major freshwater lakes of Luoma Lake and Hongze Lake, and many rivers such as the Grand Canal, the Ancient Yellow River, and the Huaishu New River. Among them, Hongze Lake is the fourth largest freshwater lake in China, one of the six major freshwater lakes, and the water is in the territory of Huai'an and Suqian.
Hongze Lake is vast, rich in resources and has a long history, which not only brings Suqian an economic industry of shipping hub, fishery, special products, and livestock products, but also brings unlimited natural and cultural scenery to Suqian.
Hongze Lake Wetland Scenic Area is the largest essence of it, and is currently the only national-level 5A scenic spot in Suqian City, known as "China's Top Ten Ecological Leisure Bases".
Ranked 11th among the inland freshwater wetlands in China, 2nd in East China, and the largest freshwater wetland nature reserve in Jiangsu Province, it is one of the unmissable resorts in Suqian.
The style of Hongze Lake wetlands varies throughout the year. But in autumn, the Hongze Lake Wetland Scenic Area is obviously a mature beauty, at this moment the reed flowers are golden, the crabs are fragrant, and the diamond horns are tender... Mature wetland objects are fascinating. However, the wind objects here are obviously different from those in southern Jiangsu.
The first stop in northern Jiangsu, headed by Suqian. Suqian journey, Sihong first.
Located in the south of Suqian, the lower reaches of the Huai River, and bordering Hongze Lake in the east, Sihong is a county with a long history and beautiful scenery, with the honors of China's wine capital, China's crab town, Jiangsu Province's ecological garden city, China's ecological demonstration area and so on. In October 2017, Sihong County was named a national garden county by the Ministry of Housing and Urban-Rural Development.
In this beautiful ecological garden city, Sihong has left many deep impressions on me. In addition to not missing the Hongze Lake Wetland Scenic Area, you can't miss the authentic cuisine of Sihong (Suqian).

The first dish to be shared is not only seasonal, but also in line with local characteristics. Sihong hairy crab, known as "China's clean hairy crab", is one of the autumn wind objects.
"It's the time when the new autumn crab is fat, and I hate to get drunk and say goodbye to Jun." Ouyang Xiu was not willing to be lonely, and he still could not forget the fat crab in his illness. Eating crabs in autumn, eating sihong hairy crabs, it is estimated that Ouyang Xiu is even more envious.
Come to the hometown of Chinese crabs, walk into the Hongze Lake wetland scenic spot, do not taste the yellow and succulent Sihong hairy crab, always feel that it will leave a deep regret for the journey, it is known as "China's cleanest hairy crab".
Male crab fat is as white as jade, and female crab paste is yellow as gold, with large, chelating fat, meat aroma and other characteristics.
Fresh and tender diamond horns can be eaten raw, cooked, and mixed, and are rich in protein, unsaturated fatty acids and a variety of vitamins and trace elements. Diamond horns are more common in the north and south of China. As one of the monsoons, this is the best time to eat diamond horns.
But what surprised me was the plate of cress, which tasted like wild water celery, and although the taste was a bit rushed, it was still deep enough for me to enjoy. Since I was a child, I have loved to eat, and when I want to eat, I will go to the riverside to pick a handful and come back. This has both the smell of emergency and the smell of memory.

However, the above-mentioned cuisine does not reflect the dietary differences between southern Jiangsu and northern Jiangsu, and it happens to be common throughout Jiangsu. Then the next few dishes are obviously Shandong characteristics, northern Anhui flavor, and there is a clear difference with the southern Jiangsu diet.

At the dinner table, there are at least three flavors of noodles, some of which are very similar to Shandong snacks. Since I didn't read the menu, I don't know the specific name. But these delicacies or snacks make people recognize at a glance that they are "common in the north".
As one of the provinces with the highest comprehensive development level in China, Jiangsu borders Shanghai, Zhejiang, Anhui and Shandong provinces. Therefore, the style of Jiangsu is not only as delicate as the impression of "Jiangnan", but also integrates the characteristics of Shandong and Anhui. Take Suqian, located in northern Jiangsu, as an example.
Suqian is located in the north of Jiangsu, west of the border with Anhui Province, located in the huaihe river, Yishusi river basin in the middle and lower reaches, is a typical northern Jiangsu water town. However, due to its close border with Anhui Province, Suqian's food customs have a shadow of northern Anhui. Like Jiangsu, the geography of Anhui Province also spans the north and south, with the division of southern Anhui and northern Anhui.
Ground pot fish is a traditional dish in Jining City, Shandong Province, which belongs to the Lu cuisine. But in Sihong County (including Suqian City, Xuzhou City, etc.), ground pot fish is also a common table dish, whether it is practiced or shaped.

In addition, Xinyuan lamb is a special dish in Jiangsu and one of the local characteristics of Suqian. Although it is produced in Siyang, it has also become a popular local dish in Sihong.
A short trip to Sihong, a short food exploration, sihong's authentic scenery gave me the initial impression of both north and south. But whether northern Jiangsu people eat noodles or rice, they still have to stay on their next trip to northern Jiangsu.
