Lin and I are both from Liaoning, and we are fond of cold noodles and barbecues. A bowl of cold noodles in Beijing can sell for more than 20 pieces, or even higher, usually we buy it back and cook it at home. 1. The cold noodles bought in the wet market should be soaked in cold water for 10 minutes (if the wet markets in many places do not sell cold noodles, you can also buy them from the Internet). Rub the cold noodles together by hand, this step should not be omitted, otherwise the noodles will be boiled out, and some places will stick together, affecting the taste.

2: Boil water, boil the water and cool the noodles. According to the amount of cold noodles to decide how much water to put in the pot, it is recommended to have a little more water, avoid cooking cold noodles, paste the pot.

Remarks: When cooking cold noodles, stir them with chopsticks to avoid sticking to the pan. Boil for 2-3 minutes, use chopsticks to pick up the cold noodles, when the cold noodles become soft, quickly fish out the cold noodles and place them in the basin, and wash them several times with cold water. Friends who like to taste hard, cold noodles do not cook for too long.
3: Wash the cold noodles with cold water 3-4 times, rub the cold noodles repeatedly with both hands, wash the alkali on the cold noodles and place them in a container for later.
After the last pass of cool water, it is recommended to use pure water.
4: Cook at home, there is no exquisite selling outside, I only prepared cucumber shreds, coriander, spicy cabbage, chili oil as a combination.
Mixing cold noodle soup is the key, many times at home to cook cold noodles taste is always worse than the outside, today I bought cold noodle soup concentrate directly where I bought cold noodles, with a ratio of 1:3 pure water to mix can be used.
Remarks: If there is no cold noodle soup concentrate, you can use it yourself: purified water, salt, soy sauce, monosodium glutamate, sugar, white vinegar, etc. according to personal taste.
5) Put the cold noodles into a large bowl, pour the cold noodle soup, put the cucumber shreds, chopped coriander, chili oil, etc. on it and start.
