The National Standard for Food Safety Sterilized Milk (GB 25190-2010) stipulates that the acidity of sheep milk ranges from 6 to 13º Τ, while the acidity test result of the above-mentioned unqualified pure goat milk is 16.1º Τ.
According to reports, the reason for the excessive acidity in sheep milk may be that the quality control of raw milk by enterprises is not in place, or it may be that effective hygiene control is not implemented according to the process requirements in the production and processing process, and it may also be related to the improper sealing of product packaging or improper control of storage and transportation conditions.
It should be pointed out that the acidity of dairy products can be divided into natural acidity and fermentation acidity. The acidity of dairy products in national standards usually refers to the total acidity of milk, which is an important indicator of dairy freshness. The higher the acidity, the more serious the degree of microbial contamination of dairy products.

According to the 2019 data of the Food and Agriculture Organization of the United Nations (FAO), the overall growth rate of goat milk production remains at 2% per year, while global goat milk consumption maintains an increase of at least 10% per year, and China shows a growth rate of more than 30%.
Previously, the domestic goat milk market was dominated by goat milk powder consumption, and mainly infant formula goat milk powder, but with the transformation of goat milk consumption, consumers' eyes also turned to liquid goat milk.
