The area of crayfish farming continues to expand: according to the survey, in 2020, the total area of crayfish farming in 16 provinces and municipalities is about 23.0777 million mu, an increase of 2.6465 million mu year-on-year, with a growth rate of 11.46%. Crayfish dining situation

General loss of crayfish catering: According to preliminary surveys, the output value of the tertiary industry dominated by catering in 2020 is about 222 billion yuan, a decrease of about 74 billion yuan compared with last year, a year-on-year decrease of about 25%, but the output value of the tertiary industry of crayfish still accounts for 63.59% of its total output value.

According to the survey, in 2019 and before, crayfish consumption was mainly carried out in offline professional crayfish stores and various small and medium-sized restaurants, food stalls, night markets, etc. There are about 41,600 stores nationwide that specialize in crayfish. In 2020, there are 8823 crayfish offline catering stores in Jiangsu Province, with a consumption volume of 70791.6 tons and an output value of 35 billion yuan; there are 103 online e-commerce platforms with a sales output value of 500 million yuan, the entire crayfish catering output value of Jiangsu Province reached 35.5 billion yuan, and the output value of crayfish leisure, festivals and logistics was 5.3 billion yuan, and the total output value of tertiary production was 40.8 billion yuan. For example, Xuyi County, Jiangsu Province, taking advantage of its brand advantages to make the crayfish industry bigger and stronger, has built two crayfish food centers in Xucheng and Maba, more than 1,000 catering shops in the county that specialize in lobster dishes, nearly 100 crayfish series cooking and processing products, and 2,000 Xuyi lobster franchise stores, covering 18 countries in the country and abroad. Another example is the establishment of a crayfish food street in Jinhu County, the county to operate crayfish as a special dish of more than 500 restaurants, Jinhu lobster franchise stores have exceeded more than 3,000, of which Nanjing has more than 500, the average daily sales of lobster 25 tons. Through years of development, Jiangsu Province has formed more than 50 large-scale well-known crayfish catering brands such as Xuyi, Hongtuo, Yu's, Hongfat Fat, Zhuda, Hope, Taiming, Yang's and so on. According to incomplete surveys, there are more than 4,000 crayfish restaurants of various types in Jiangxi Province in 2020, an increase of more than 300 over 2019. Affected by the new crown epidemic, the crayfish catering industry in Jiangxi will have a greater impact in 2020. Before May, the overall consumption of the catering industry fell by 70% compared with the same period last year, and after May, the crayfish catering industry has continued to recover, and it is still down nearly 30% from last year.

The most obvious feature of crayfish consumption in 2020 is the expansion of online consumption and the increasing maturity of takeaway channels. From the end of January to the beginning of March last year, various restaurants were basically shut down; on March 5, the catering industry slowly opened, but the offline consumption of crayfish was still very dismal; even in April and August, when the peak crayfish consumption season was in Season, the transaction volume of crayfish restaurants was still reduced by 20%-30% compared with the same period in 2019. Problems in the development of the crayfish industry in 2020

(1) The guidance of the crayfish industry needs to be further strengthened. At present, the overall preference for the development of crayfish production in China, but there is still blindness in some areas, the slowdown in market expansion, the risk of declining benefits and other problems have gradually emerged, the integration level of the first, second and third industries of the crayfish industry needs to be improved, and the integration of integrated industrial development such as aquaculture, processing, logistics and marketing needs to be strengthened. As a national-level industry association, the China Aquatic Products Circulation and Processing Association has the responsibility and obligation to strengthen the guidance of the crayfish industry.

(2) The crayfish seed industry system needs to be built urgently. The construction of the crayfish seed industry system lags behind the needs of aquaculture development, and the breeding of seedlings mainly relies on the self-breeding and self-breeding of farmers, the germplasm degradation is serious, and the output of fry is unstable, which affects the quality of products and the improvement of breeding efficiency.

(3) The standardization and penetration rate of crayfish farming technology is not enough. At present, the breeding technology is empirical, the breeding method is extensive, the stability of technical performance and the level of benefits of the breeding mode are quite different from region to region, the relevant technical parameters of various breeding modes need to be further quantified, and the standardization level of aquaculture production needs to be improved.

(4) The prevention and control technology of crayfish disease is not perfect. In recent years, crayfish diseases have shown an upward trend, with an increase in disease types, an expansion of the scope of incidence, and an increase in incidence, which has increased losses to farmers and affected the healthy development of the industry; insufficient research on the epidemiology and prevention and control technologies of related diseases; vigilance against quality and safety risks caused by irregular use of fishing drugs.

(5) The scale development of the crayfish processing industry and product research and development are not enough. The vast majority of provinces have few processing leading enterprises, small industrial scale, low proportion of secondary output value in the entire industrial economy, and insufficient support for the development of primary production; few varieties of processed products, low grades, and few new products; insufficient research and development efforts and application promotion of crayfish deep processing.

Proposals for the development of the crayfish industry in 2021

In view of the main problems in the current crayfish industry, five suggestions are proposed:

(1) In order to ensure the sustainable and healthy development of the crayfish industry, the crayfish industry urgently needs correct guidance. China Aquatic Products Circulation and Processing Association as a national industry association, we recommend appropriate control of the growth rate of crayfish farming area, crayfish farming should be "not competing with grain land" to ensure national food security; improve and standardize e-commerce sales, so that crayfish products quickly enter thousands of households; encourage social capital to enter the crayfish industry; through the government to set up a stage, enterprise singing, with enterprises as the main body to make bigger and stronger crayfish festivals and other special promotion activities; to create a regional public brand, enterprise brand and product brand of crayfish into a system Build a number of resorts and scenic spots that integrate crayfish farming, tourism, leisure, catering and cultural functions; encourage leading crayfish enterprises to integrate the development of primary, secondary and tertiary industries.

(2) Accelerate the selection and breeding of crayfish seeds. Promote the construction of a crayfish breeding system to achieve accurate seed supply. In view of the problems of parental degradation and uneven quality of seedlings, we vigorously promote the breeding and zoning breeding technology model to achieve localization and precision of seed production. Cultivate large-scale crayfish seed production enterprises, build a commercial breeding system with enterprises as the main body, and select excellent varieties of crayfish with independent intellectual property rights selected by the joint research institute of enterprises to accelerate the improvement of the independent research and development and supply capabilities of crayfish seeds.

(3) Vigorously promote the scientific breeding technology of crayfish. Vigorously promote standardized breeding technology, realize "breeding separation, precision breeding", and improve the yield and specifications of crayfish farming. Extend the chain of rice and shrimp farming, implement the integration of shrimp and rice-rice co-cultivation and rice-fishery symbiosis, make full use of rice field spatio-temporal resources, improve the index of multiple seeds, promote balanced listing, reduce breeding risks, and increase the efficiency of breeding.

(4) Improve the disease prevention and control system. Strengthen disease monitoring and prevention and control, improve epidemic emergency plans, accelerate disease prevention and control science and technology research and development and technology promotion; strengthen quality and safety supervision, strictly prohibit or reduce the use of pesticides and fertilizers, strictly prohibit the use of non-drugs, and scientifically and rationally use related drugs.

(5) Accelerate the development of the crayfish processing industry. Accelerate the upgrading of crayfish processing equipment, promote the automatic intelligent production line of crayfish, and make processing enterprises become the "stabilizer" of the development of the crayfish industry; strengthen the research on key technologies for the quality control of crayfish processing, and vigorously develop ready-to-eat flavor crayfish products and sales; accelerate the research and development of deep processing technology, increase the comprehensive utilization of by-products, and continuously expand to agriculture, medicine, chemical industry, environmental protection and other fields; guide enterprises to implement HACCP and other international food quality management system certification Support leading enterprises to create environment-friendly processing enterprises; strictly implement the discharge of production wastewater to improve the quality and safety of crayfish products.
