Salted beef
raw material:
Beef 600g, Salt 15g, Sugar 10g, Green Onion 10g, Ginger 10g Peppercorns 2g, Rice Wine 30g, Coriander 100g, Sesame Oil 15g.
Preparation Method:
(1) Wash the beef, cut it into large pieces, and then mix it with salt, sugar and peppercorns to marinate evenly (one week in winter, 3 days in summer and autumn). The meat is marinated and re-washed. (2) Put the marinated beef into a pot of boiling water and blanch the water, then add the crushed shallots and ginger, rice wine and the right amount of water, cook on the heat until 70% rotten, the pot is away from the heat, the meat is still soaked in the pot, cool thoroughly.

Light and sharp, suitable for summer.
