Aluminum-containing food additives, such as potassium aluminum sulfate (also known as potassium alum), ammonium aluminum sulfate (also known as ammonium alum), etc., are used as leavening agents and stabilizers in food, and aluminum residues will be generated after use. Aluminum-containing food additives will not cause harm to health when used according to standards, but long-term consumption of foods with aluminum exceeding standards will lead to a decline in exercise and learning and memory, affecting children's intellectual development. The National Standard for Food Safety The Standard for the Use of Food Additives (GB 2760-2014) stipulates that the maximum residue limit value of aluminum in fried noodle products and legume products (dry samples, measured in Al) is 100mg/kg. The reason why the residual amount of aluminum (dry samples, in terms of Al) in fried noodle products and bean products exceeds the standard may be that individual merchants use aluminum-containing food additives in excess of the limit in the production and processing process in order to increase the taste of the product, or the aluminum content in the compound additives used is too high.

Microbial contamination problems were detected in 5 batches of samples
Among the unqualified samples, 5 batches of samples were detected with microbial contamination problems. Lead is a common pollutant of heavy metals that can seriously endanger human health. Long-term consumption of food with excessive lead may cause damage to the human blood system and nervous system, especially on children's growth and intellectual development. The reason why the detection value of lead (Pb) in compound food additives exceeds the standard may be that the lead content in the raw materials used by the production enterprise exceeds the standard, or it may be the lead migration in the production equipment or packaging materials.
3 batches of samples detected other contaminants exceeding the standard
Among the unqualified samples, 3 batches of samples were detected to have other pollutants exceeding the standard. Among them, 2 batches of nitrite (in terms of NO2-) detected did not meet the requirements of the national food safety standards, namely: packaged drinking water sold by Liqun Group Zibo Shopping Plaza Co., Ltd., which is nominally produced by Qingdao Baifuyuan Drinking Water Co., Ltd.; and Jingdo packaged drinking water produced by Taian Bainian Health Technology Co., Ltd.
Nitrite can reflect the contamination of water to a certain extent, and drinking water with serious excess of nitrite may cause poisoning. The National Standard for Food Safety (GB 2762-2017) stipulates that the maximum limit value of nitrite (in terms of NO2-) in packaged drinking water (except mineral water) is 0.005mg/L. Nitrite in the water can be converted from nitrate, nitrate has natural and human sources, after the water is contaminated by bacteria, bacteria will release nitrate reductase at a certain temperature, reducing the nitrate in the water to nitrite, and if the disinfection control is improper, it will also lead to an increase in the concentration of nitrite in the water transmission system.

The reason for the excessive benzo[a] pyrene in edible vegetable oil may be that the high temperature causes the benzo[a] pyrene content to rise when the raw materials are repeatedly baked, roasted or fried during the production process; it may also be contaminated by contact with lubricating oil during processing and the use of extraction solvents that do not meet the requirements; it may also be that oil crops absorb benzo[a] pyrene in the soil, water and atmosphere during the planting process, or are contaminated in the process of storage, drying and so on.
