The selection of cattle is usually in the first two months of the lunar calendar, everyone will go to the market to buy old cattle sold by other farmers, if they also raise cattle in their own homes, they will generally choose cattle that are about to be eliminated to feed. In fact, this also has an advantage, that is, the price of buying a cow is too high, but the price of old cattle and cattle with poor physique will not be unaffordable, and the money for feeding forage and broad beans will not be much, so it is very cost-effective.
After feeding for a period of time, the original dry and lean cattle have grown fat, the body has become better, the coat color is more slippery, and when the cold dew comes, it can be slaughtered and eaten, and some of the beef can be used to marinate the dried cow. Each cow can be pickled after slaughter, that is, 12 pairs, each pair has a name: lunch box, inner crotch, sickle, fire fan, outer white, mouth, grab the mouth, chest, bone heart, melon seeds and two pairs of ribs.
