In accordance with the spirit of the notice of the Kailuan Mining Bureau, Tangshan Mine has mobilized the backbone forces to set up a class Chinese food canteen (also known as a bakery), and they have carefully produced a variety of class Chinese food varieties, such as: steamed peanuts, meat steamed buns, bread eggs, flatbread, sugar cakes, meat cakes, etc., of which the miners' favorite is the meat cake.

Chef Liu, who was involved in the making of pork cakes, is now retired. According to him, the reason why Tangshan mining meat cake is loved by miners is the key to the ingredients: flour is a high-grade fine product, the meat filling is five-flowered fresh pork cut into thin slices, and the seasoning is old sweet noodle sauce, fresh ginger, fresh onions and various condiments. The production process requirements of meat cakes are also very strict, you have to use hot water to blanch noodles, cold water and noodles, with lard as a crisp; the skin should be rubbed with eggs, the agent mouth is not leaky; the electric oven is slowly baked, baked in each oven for 30 minutes.

When I go home for a drink, I break two meat cakes, take out the meat slices inside to serve wine dishes, chew on the big slices of meat that are fragrant, and drink some small wine, not to mention how beautiful! ”

In the 1990s, when the "Nanfuzhuang Jitou Ba Brain Hot Pot City" run by tangshan mining labor service company was opened, master Zhang, who had made meat cakes in the Chinese food canteen of Tangshan mining class, was specially hired to make meat cakes in hot pot city. On the basis of inheriting the original method, Master Zhang improved the process and materials, especially when mixing the filling, adding small ground sesame oil. The meat cakes weigh 100 grams each and are priced at 1.8 yuan, and when they are sold, they borrow the reputation of Tangshan Mining Class Chinese beef cakes, called "Kailuan meat cakes". Although the price of the open luan meat cake is nearly half the price of the market, it is extremely hot. After the customers ate the meat cake, the praise was overwhelming, and the people who came to the hot pot city to buy the meat cake were endless, and since then, the luan meat cake has become famous in Tangshan.

Once, a friend of mine celebrated a full moon for his son and held a 5-table wedding feast in hot pot city. During the banquet, the guests praised the delicious Open Luan meat cake, and said that they wanted to buy some to take home for their families to taste, and the friend said happily: "I invite guests, everyone wants it." ”

After the waiter handed over the number of reservations made by the guests to the kitchen, he quickly got feedback: "I'm sorry! The number of orders is too much, after consultation with the master, each person is limited to 6, please understand more. ”

Afterwards, I heard that the number of meat cakes ordered by the guests that day ranged from 6 to 25, far exceeding the master's ability to make at that time. In order to ensure the quality of the meat cake and the follow-up supply of the hotel on the same day, it was necessary to make a limited amount of the next policy.

Nowadays, it is difficult to taste authentic Kailuan meat yakitori on the market, and whenever I hear the clamor for kailuan cakes along the street, although I know that it only borrows the reputation of kailuan meat cakes, it arouses my longing for kailuan meat cakes, and its delicious taste lingers in my mind.
