The genesis of Ji'an shortbread making techniques has long been unknown
However, the Ji'an pastry industry has a traditional Mid-Autumn Festival ritual custom

Legend
The originator of the pastry industry in Luling (Ji'an ancient name) is "Migong"
Therefore, every year on the night of the Mid-Autumn Festival, an altar is opened

In the last year of the Yuan Dynasty, the Mid-Autumn Festival was held in Jizhou

In order to protect and inherit this food culture with local characteristics, in 2009, the Jizhou District Cultural Center launched the application for the traditional production techniques of Ji'an shortbread, and recorded and sorted out the traditional production process of Ji'an shortbread and the tools used.
In 2010, the traditional production technique of Ji'an shortbread was named the Provincial Intangible Cultural Heritage Protection List because of its distinctive local characteristics and unique production skills.
The craftsmanship of Ji'an shortbread returns to tradition and reinvents the glory of the year.
