If you compare lye water to a kind of wine, I think it is jiangnan yellow wine. Jingdezhen porcelain originated from the Fuliang Dongxiang kiln (now Yaoli Village, Yaoli Town), since the middle of the Tang Dynasty, there were ceramic workshops here, to the Northern Song Dynasty was already the peak of the kiln fire, dozens of kilns, porcelain workshops everywhere. The local villagers are rich merchants, that is, the owners of ceramic business workshops; qiao is a worker, that is, those who are skilled in porcelain craftsmanship become full-time craftsmen hired by the workshop owners.
In order to stimulate the production enthusiasm of craftsmen, improve product quality and output, the workshop owner not only has reasonable labor remuneration, but also has better meals for three meals a day, plus a snack meal every day, in order to compete for the exquisite craftsmanship. In order to enrich the variety of dim sum, as early as the Northern Song Dynasty, a few kilns and workshops created a new dim sum variety, namely "alkali water soup".
Fuliang folk call this "cake", because of the rice stalk burnt ash filtered water, so called "gray water cake". Later, some people made small round cakes and steamed them in cages, which were called "gray fruits" (the Floating Liang people collectively called "cakes" for the rice foods steamed as a whole; the steamed products made into small ones were collectively called "fruits"). This product is cut into thin slices and cooked and then eaten with a fragrant flavor (strong alkali aroma), smooth, refreshing, and has a unique flavor. Later, through households, villages to villages, by the time of the Southern Song Dynasty, most of the peasant households in the county could master the production skills of this product.
In addition to being used as a snack for entertaining guests at home, alkali water dumplings have also become dry food for going up the mountain or going to farmland far from home because it is convenient to carry.
According to legend, Yue Fei of the Southern Song Dynasty once led the Yue family army to garrison Jiujiang and Hukou to resist jin, and the people of Fuliang once made "gray fruits" in every household and sent people to Send People to Yue Fei's army to work for labor. Yue Jiajun also used this product as dry food for the march, and at the request of the abbot's old monk, he wrote for the temple the inscription "The organ is not exposed to the clouds, and the mood is immaculate and the moon is in the sky", so there are still folk songs to this day: the ancient Yangfu Temple, leaving Yue Fei characters, sending jun alkali water dumplings, jing loyal to protect the country.
During the Qing Dynasty and Xianfeng period, when the Taiping Army turned to Fuliang, the people of Fuliang also used this product to comfort the Taiping Army. During the period of the agrarian revolutionary war, many peasant households in Fuliang used this to comfort the Red Army who had turned to Fuliang and the Red Army guerrillas who persisted in revolutionary struggle in the mountainous areas.

Lye water is large it is refined with rice, mixed with lye water (villagers mostly use early rice stalks to burn ash filter water for alkali, its taste is more fragrant than the ice alkali soaked water sold in the market), steamed with a special sieve, thick about 10 cm.
Lye water is very hard, the color is like a beef tendon sole, very elastic, very weighty. When eaten, it is cut into thin slices and stir-fried with local smoked bacon and garlic, which can be eaten for both a full stomach and a wine dish.
