The flowers of Taiwanese jujube are axillary polygonal inflorescences, with 1 inflorescence growing in each leaf axillary, and each inflorescence has 8 to 20 small yellow-green flowers

Flowers, each small flower has 5 yellow calyxes, 5 petals, 5 stamens, 1 pistil, and the ovary is wrapped in a yellow honey plate of anthers.

The flower bud differentiation and branch growth of Taiwan jujube are carried out almost simultaneously, and the flowering period varies according to the variety, and it blooms in May to December, of which may to July have less flowers, fewer hanging fruits, and poor quality, august to November have the largest amount of flowers, and although they can flower in December, they have poor pollination effect. Flowers generally bloom at 6:00 to 8:00 a.m. and 9:00 a.m. to 11:00 p.m., but some varieties delay their bloom until 15:00 p.m. Pollination and fertilization results are good on the day of flowering in Taiwan, and if pollinated the next day, the fertilization ability is significantly reduced.

The female and stamens of the same flower have different maturity times, but a large number of females and stamens will mature at the same time when planted in pieces, and can be pollinated by wind, bees, butterflies, ants or other insects, and the fruit set rate is high, generally each inflorescence can set 3 to 5 fruits. When the young fruit of the green jujube grows to the size of soybean, there will be 1 to 2 physiological fruit drops, and there will be more physiological fruit drops; after 1 month, the fruit expansion rate will slow down, and the physiological fruit drop will also be significantly reduced; 3 months after pollination, the fruit core will begin to harden, and the fruit will accelerate expansion; about 4 months after pollination, the fruit color will begin to change from blue-green to light green or yellow-green, at this time the fruit has completed nutrient accumulation and core development, and begins to mature.

The yield of jujube in Taiwan was 30 kg per plant, with a yield of about 460 kg per 667 m2; the yield per plant in the second year was more than 50 kg, and the yield per 667 m2 was 1600 kg; and the yield per plant in the third year was as high as 75 kg. Jujube fruit is large, fine in core, crystal clear and tender flesh, strong in flavor, good in taste, and contains a variety of amino acids, vitamins and rich trace elements. Jujube fruit weighs 40 to 50 g per fruit, while large fruit reaches 100 to 120 g, with a total sugar content of 15%-18%, and a soluble solids content of 13%-14%, up to 15%.
