Roast duck is the world's greatest delicacy

Today's Beijing roast duck may be a combination of Nanjing roast duck in Jiangsu and Zhejiang, "Fan Jiao" (the ancient name of Shandong roast duck) of Lu cuisine, and "hot duck" (ancient name of roast duck) in Beijing during the Tang, Song and Jinyuan dynasties.

During the Southern and Northern Dynasties, the Northern Dynasty recorded the existence of Shandong roast duck (known as "Fan Jiao" in ancient Shandong) in the Qi Min Zhi Shu, and the Southern Dynasty recorded the existence of "Hot Duck" in the "Food Treasure Record".

Since then, the Tang, Song and Yuan dynasties, there are records related to roast duck all over the world.

Even in the yuan miscellaneous drama, there is already a saying of "roasting duck" (there was no word "roast" at that time), such as "Watching the Money Slave Buy the Wronged Creditor" by the Yuanren Zheng Tingyu, which mentioned that "I wanted to burn the duck to eat that day, and I walked to the street, and the shop was burning duck, and the oil was thick." ”

Although the oldest provenance of roast duck is difficult to verify, it is a fact that after the Southern and Northern Dynasties, there are many places in the world.

There is a folk saying that Beijing roast duck was born in Nanjing roast duck, and during the Ming Dynasty, Nanjing roast duck moved to Beijing with Zhu Di, on the grounds that Beijing roast duck at that time was mostly called "South Furnace Duck".

However, this statement does not conclusively confirm that the Beijing roast duck is indeed from Nanjing.

But in any case, it is an indisputable fact that roast duck gradually spread throughout China after the Southern and Northern Dynasties, and after thousands of years of continuous evolution, beijing finally became famous all over the world.
