In other words, this Shen Wansan is rich enough to rival the country. Zhu Yuanzhang was jealous and greedy for his wealth. Once, Zhu Yuanzhang wanted to find trouble with Shen Wansan, so he pointed to the pig's trotters and asked how to eat. Because the emperor's surname was Zhu at that time, the word "pig" was taboo. Shen Wansan was not in a hurry, pulled out a thin bone from his hoof, cut the flesh with the bone, and resolved the crisis, this wit is really admirable!

Ingredients required
- 2 pig's trotters (approx. 1500 g)
- Light soy sauce 50 ml
- Dark soy sauce 30 ml
- Cooking wine 50 ml
- 50 grams of caster sugar
- Ginger 50 grams
- 1 green onion
- 3 star anise
- 1 cinnamon
- 3 bay leaves
- Sichuan peppercorns 10 grams
- 5 dried chilies
- Salt 10 grams
- Essence of Chicken 5 grams
- 30 ml of cooking oil
Cooking process
1: Prepare the pig's trotters: clean the pig's trotters, burn them with fire to remove the miscellaneous hairs on the surface, then scrape them clean with a knife and chop them into large pieces.
2: Blanch and remove the fish: Add an appropriate amount of water to the pot, add 20ml of pig's trotters, ginger slices and cooking wine, skim off the foam after boiling, rinse with water, drain and set aside.
3) Stir-fry sugar: Pour 20ml of cooking oil into the pan, add rock sugar, stir-fry over low heat until the rock sugar dissolves and turns caramel color, add pig's trotters and stir-fry when bubbling to color.
4) Stir-fry spices: Stir-fry 10ml of cooking oil in another pot, add ginger, green onions, star anise, cinnamon, bay leaves, Sichuan peppercorns and dried chili peppers and stir-fry until fragrant 味️.
5) Stew the pig's trotters: Pour the fried spices into the pig's trotters pot, add light soy sauce, dark soy sauce, 30ml of cooking wine, salt, chicken essence, add an appropriate amount of water, cover the pig's trotters, bring to a boil over high heat, turn to low heat and simmer for about 2 hours, until the pig's trotters are soft and rotten.
6: Collect the juice and put it on the plate: Collect the stewed pig's trotters on high heat, and when the soup becomes thick, you can put it out of the pot and put it on the plate, sprinkle with chopped green onions to garnish.

Cooking tips
- When blanching pig's trotters, boil them in a pot under cold water, which can better remove blood and fishy smell.
