A few days ago, the reporter approached the Daqingshan Winery located in Daqingshan, Longzhu Village, Baili Rhododendron Baina Township, and the two rows of wine cellars built in the Ming Dynasty in the mountains were particularly eye-catching, and the air was filled with a strong aroma of wine.
Daqingshan Winery is surrounded by green mountains and green water. Yu Changjun, secretary of the party branch of Longzhu Village, said that since the Ming Dynasty, liquor has been brewed here. Since then, the liquor brewing technique of Longzhu Village has been passed down from generation to generation and has a history of hundreds of years.
Today, the old cellars are still intact, bearing witness to the centuries-old winemaking history of this land. When we open the Ming Dynasty wine cellar that is still in use, it is as if we have traveled back to that ancient era.
"Now the Daqingshan Distillery is still using these stone cellars to store wine." Yu Changwei, head of Daqingshan Distillery, said: "We have not only retained the ancient wine-making techniques, but also combined modern technology to improve the quality and yield of liquor. ”
In the production workshop, workers are busy carrying out a series of complex wine-making processes such as mixing, retorting, discharging, koji, and fermentation in the cellar.
"Daqingshan has the best water and climate, which are the key to making high-quality baijiu. In addition, high-quality red sorghum is used as a raw material, which makes our Daqing Mountain wine have a unique flavor such as sweet and harmonious, soft and mellow. Winemaker Yu Mingliang is one of the inheritors of Baijiu brewing skills in Longzhu Village, he told reporters.
Daqingshan Distillery adopts the method of building a company and village collective cooperative, and the distillery provides a fixed income of 6,000 yuan to the village collective every year, and the dividend of the distillery's profit is calculated separately. This cooperation model not only provides a stable source of income for the village collective, but also provides more employment opportunities for the villagers.
Yang Dejun, a villager from Longzhu Village, an ordinary employee of Daqingshan Distillery, said: "It's good to work here, you don't have to go out to work, it's close to home, and the treatment is good, with a monthly income of about 4,000 yuan." ”
"As a national 5A-level tourist attraction, Baili Rhododendron has attracted a large number of tourists in recent years, and the wine brewed by Daqingshan Winery has also been favored by some tourists. At present, the company has more than 300 tons of base wine stored in the distillery. Yu Changwei said.
Yu Changjun said: "We will continue to protect the green waters and lush mountains here, inherit the good winemaking skills, and cooperate with the work of Chang Distillery, so that the liquor industry in the village will become bigger and bigger, and more villagers will become rich." ”
Longzhu Village is ushering in new development opportunities with the aroma of historical wine. Between this green water and green mountains, ancient winemaking techniques and modern technology complement each other, and a new chapter in rural revitalization is about to be written.
