Lacquer tree, also known as "Qi tree", has the name of "biting tree" of the rivers and lakes, many ethnic groups call it "lacquer pu" ("Pu" that is, the meaning of allergies), for the lacquer family lacquer is a deciduous tree, is a very important economic tree species in the mainland and neighboring countries, Guizhou, Sichuan, Yunnan, Hubei, Shaanxi and other places in the mainland are its main production areas. Located in Nujiang Lisu Autonomous Prefecture in Yunnan Province, there are many sumac trees distributed or cultivated, with Fugong and Lushui being more concentrated, mainly growing in the cool zone of the middle mountains at an altitude of 1300-2700 meters. Compatriots of all nationalities have a very long history of using lacquer trees, and people fully realize the important value of lacquer trees, and raw lacquer, lacquer seeds, and wood can be used. At the same time, they also believe that sumac has very important medicinal properties.

Lacquer oil

Lacquer oil, is the solid oil squeezed from the fruit of the lacquer tree, melted when heated, solidified when cold, and usually takes 9 steps to make the finished lacquer oil from "picking lacquer seeds, heating, extrusion to cooling". Although lacquer oil is oil, it does not feel greasy to the touch, and the color of the finished oil can be divided into waxy yellow and gray-brown. The shape of lacquer oil is lumpy like brown sugar, which is the oil squeezed from the lacquer seeds of wild lacquer trees in the Nujiang River Gorge, and has high nutritional value. In December 2022, the "Lacquer Oil Making Technique" was announced as a representative project of provincial intangible cultural heritage in Yunnan Province.

Lacquered chicken

After learning about the lacquer tree and lacquer oil, I finally came to today's highlight of the lacquer oil chicken. Lacquer oil chicken is made by stir-frying with rich lacquer oil, adding spices, and simmering for about half an hour.
