Zhang Youshu and his wife are from Anhui, and water chestnuts are a special crop in their hometown, also known as horseshoe. Since 2006, they have contracted 14 acres of farmland to grow water chestnuts in the second group of the Xianghuaqiao Neighborhood Committee. In order to save costs, they did not ask for help from workers, and all farm work was done by husband and wife. Zhang Youshu said that the planting time of water chestnuts is July every year, which happens to be summer, and the harvest time is December every year, and it is winter, so it is harvested until the end of spring. During these hours, they spend up to eight or nine hours a day in the water.
The planting of water chestnuts requires Zhang Youshu and his wife to cut off the water chestnut seedlings, use a hoe or shovel to dig out the horseshoe from the dirt soil, and the dug horse's hooves also need to wash off the mud on the surface, and sort out the water chestnuts of poor quality before they can be wholesaled to the merchants in the major farmers' markets.
"Water chestnuts have high requirements for farmland water quality, and we have been growing them here for more than 10 years, and the yield is relatively stable. Zhang Youshu said that every year, looking at the water chestnuts with large size, high yield, sweet and no residue, crisp and delicious, they are happy no matter how tired they are, because this is the main way for their husbands and wives to increase their income and get rich.
