1. Cured bacon
Xiaohan has the traditional Xi of curing bacon. Bacon is mainly popular in Sichuan, Hunan and Guangdong, and is also made in other parts of the south, and there may be differences in bacon practices and flavors in different regions. Presumably many friends are beginning to marinate bacon to prepare for the New Year, today I will share the production method of Hunan bacon, Hunan bacon is very distinctive, Hunan bacon is divided into two kinds of bone-based bacon and boneless bacon, the color is red and bright, the taste is salty and fragrant, fat but not greasy, spicy and appetizing.
Ingredients: Fat pork, 2.5 kg of salt, 0 refined nitrate. 2 kg, 5 kg of sugar, 3.7 kg of liquor and soy sauce, 3.5 kg of distilled water
Method: Thin and lean fresh meat scraped off the skin and meat dirt, cut into 2 catties, 5 cm thick standard meat strips, 2.5 kg of salt, 0.2 kg of refined nitrate, 5 kg of sugar, 3.7 kg of liquor and soy sauce, 3~4 kg of distilled water, crush salt and nitrate, and dry and grind spices such as pepper, fennel, cinnamon and so on. Wipe the cut meat strips and dry marinade thoroughly, put them into the tank in the order of the meat side - down, the top layer of skin is facing up, the remaining dry marinade is applied on the upper layer of meat strips, marinate for 3 days and turn the tank; hang the dried meat embryo in the smoking room, ignite the sawdust, close the smokehouse door, make the smoke evenly dispersed, the initial temperature in the smoking room is 70 °C, gradually reduce to 50~56 °C after 3~4 hours, keep about 28 hours for the finished product, just become bacon, it must be preserved for 3~4 months before it matures.
2. Eat vegetables
Jiangsu and Zhejiang have the traditional Xi of eating vegetables and rice in the Xiaohan solar term, especially in Nanjing.
