【Ingredient Details】
Appropriate amount of rice, 80 grams of shepherd's cabbage, a spoonful of lard
【Directions】
When I usually cook pork, I often cut off the fat part separately, or cut a part, put it in the refrigerator, take it out when I have time, thaw it at room temperature, and then put it in a waterless and oil-free pot.
Slowly simmer the meat oil over low heat, and turn off the heat until the fat is browned.
Pour in the meat oil, put the oil residue separately, and add some to the stew another day, which is very good for flavor.
After the meat fat is solidified at a low temperature, it is lard, so much about 50 grams of lard, a small portion is enough, and the rest is refrigerated.
Add water to a pot, bring the water to a boil, add a little salt and oil, and pour in the washed shepherd's cabbage.
Blanch for 1 minute, remove the water.
Then quickly put the shepherd's cabbage over the cold water.
Remove the shepherd's cabbage and squeeze the water, spread it out to cool thoroughly.
Shepherd's cabbage can be prepared more at a time, fully cooled and divided into small portions, I divide it into 4 parts, two portions of 80 grams each, and the other two portions of 50 grams each, you can divide the amount according to your one-time needs, and then put it in the refrigerator to freeze, the shepherd's cabbage is not easy to buy or when the shepherd's cabbage is about to be next season, so that the storage can be eaten at any time.
I am freshly cooked rice in the morning, cooked with 180 grams of rice and about 1.2 times the water of the rice.
Put the rice in a pan or large plate, spread out the rice to cool, and then chop the shepherd's cabbage.
Add more lard.
Heat until the lard is melted, then pour in the chopped shepherd's cabbage.
Stir-fry until fragrant, about 30 seconds.
Pour in the rice.
Add a pinch of salt.
Stir-fry evenly.
Put the shepherd's cabbage rice in a bowl, press it with a spoon and put it upside down on a plate.
There is a special fragrance of shepherd's cabbage, there is a special fragrance of lard, after the rice absorbs two kinds of fragrance, it is fresh and fragrant, moist but not greasy, the rice grains are distinct, soft and glutinous taste is good.
【Tips】
1. These two things are shepherd's cabbage and lard, shepherd's cabbage has a special fragrance, lard has a special aroma and is very delicious, if the lard is replaced with vegetable oil, there will be a lack of aroma;
2. After blanching the shepherd's cabbage, the cold water can keep the emerald green, better looking; the shepherd's cabbage does not need to put too much, I use 180 grams of raw rice for two servings, and the amount of shepherd's cabbage can be controlled between 70~90 grams, because the more shepherd's cabbage is used, because it is more firewood, the more oil will be used, the higher the calorie; and if the shepherd's cabbage is used too little, the fragrance will be worse.
3. Capsule's cabbage is drier than firewood, so it is recommended to add more lard and stir-fry, it is more delicious to be fragrant and moist without firewood, but it will be higher if you add more calories to oil, so it is recommended to eat it for breakfast, and drink more water in the morning after eating, which can help speed up metabolism.
4. I like to use freshly stewed rice to cool down before stir-frying, or I can use overnight rice to make fried rice, the difference:
Use freshly stewed rice to make fried rice, advantages: rice fragrance is stronger and better digested; disadvantage is not easy to stir-fry, need to master good skills, (1) spread the rice to cool down, reduce heat, avoid balls; (2) use freshly stewed rice, do not add more water when cooking rice, to ensure that the rice is soft and hard moderate; (3) fry more in the pot, which will take away the heat in the rice, so that the fried rice is very dry, and the grains are clearly not lumpy.
Advantages of making fried rice with overnight rice: it is easy to fry and more distinct, the taste is soft and glutinous and chewy; disadvantages: the starch in the leftover rice will be aged, and the longer the aging time, the higher the degree of aging, and the starch is not easy to digest after aging, which is easy to increase the digestive burden.
5. Seasoning only add salt, avoid too much seasoning, but hide the original flavor of the shepherd's cabbage and lard.
