【Preparations】:
1. Today we use chicken legs to make hand-pulled chicken, this kind of chicken legs generally cannot buy fresh, either more expensive chilled chicken legs, or cheaper frozen chicken legs, this time I use chilled chicken legs. Of course, this one is definitely not as good as fresh chicken drumsticks.
2. First of all, the chicken thighs should be cleaned, mainly the impurities of the epidermis and the unplucked fluff should be treated clean, and then soaked in water for more than 1 hour after washing, and the water should be changed every 15 minutes in the soaking process, the purpose of this is to soak the blood inside, so that you can reduce the fishy smell of the chicken, and wipe the moisture of the skin of the chicken thighs with kitchen paper after soaking.
3. Then the chicken thighs should be marinated, each chicken thigh should be smeared with 0.5 grams of edible salt, this is to let the chicken thighs first into a base taste, all the salt is smeared and put aside to marinate for 30 minutes.
4. Next, let's prepare a hand-pulled chicken sauce, add 30 grams of salted baked chicken powder, 30 grams of cooked peanut oil (hot peanut oil), 15 grams of sesame sesame oil, stir well, so that the sauce of the pulled chicken is ready.
5. To make pulled chicken, you also need some fishy ingredients, cut the ginger into ginger slices, and cut 3 spring onions in half into 2 pieces. Both of these are used when steaming chicken drumsticks.
6. To make this dish, you also need spring onions and coriander to increase the flavor, 3 spring onions cut into chopped green onions, wash the coriander after removing the roots, and then cut into 2 cm pieces for later use.
7. Also prepare some fried peanut rice to increase the taste and flavor, it is recommended to remove the skin of peanut rice, so that it is convenient to eat and the taste is better. In addition, if there are cooked white sesame seeds, you can also prepare some for later.
【Cooking Method】:
1. Add water to the steamer, turn on high heat to bring the water to a boil, wait for the atmosphere to put the chicken thighs into the steamer, put the prepared ginger slices and green onions on top of the chicken thighs, and then cover and steam over medium heat for 25 minutes.
2. When steaming chicken thighs, prepare some ice water (cool white open + ice cubes), and use cool white open if there is no ice cubes. After the chicken thighs have been steamed for enough time, you can get out of the pot, and immediately after the pot, soak the chicken thighs in ice water for 5 minutes, the purpose of this can prevent the chicken from continuing to age due to residual temperature, and also make the chicken skin become crisper through thermal expansion and cold contraction.
3. After the chicken thighs are completely cooled, you can fish out the control water, and after the surface water is drained, you can start to tear the chicken off, tear the chicken into small pieces, tear the chicken skin into small pieces, and the remaining chicken bones will not be needed.
4. After tearing off all the chicken, you can start seasoning, add the prepared sauce to it, and pour the prepared peanut rice and cooked white sesame seeds together, and then fish it out and mix evenly. If you like a little more juice, you can add 30 grams of chicken broth produced when steaming chicken thighs.
5. After stirring well, pour the chopped green onion and coriander into it, stir a few times to put it on a plate, and it is delicious.
Technical Summary:
1. If the soaking time is short, you can cut the chicken thighs first, so that the blood and water inside can ooze out better and the fishy smell will be light. Because it does not blanch, the step of soaking water is very important.
2. It is not recommended to steam for too long when steaming, so that the steamed meat can be smooth and tender and have a good taste. The meat on the chicken thighs is thicker, so I steamed it slightly longer, if not the chicken thighs used, then the time can be reduced accordingly.
3. The chopped green onion and coriander are added after stirring the seasoning evenly and before serving, so that the spring onion and coriander will not look wilted and more vibrant.
