Some believe that the monks of the Abbey of Saint-Huber were responsible for the crossbreeding of old French breeds, creating a low olfactory hound that could advance heavily and slowly over rough terrain, followed by a human hunting companion who tracked rabbits and deer. Their precision and insistence on smell made Bassette a common choice for the French aristocracy, and hunting was a way of life for them.
