Macanese lettuce is a fusion cuisine based on Portuguese cuisine that incorporates ingredients, spices and cooking methods from China, Africa, India, Japan, Malaysia and South Asian countries. Although Macau's native cuisine is greatly influenced by Chinese and Portuguese cuisine, it has its own unique features.

In the middle of the sixteenth century, the Portuguese settled in Macau, along with people of different ethnicities such as Africa, India, Japan, Malaysia and South Asian countries, and the Macao lettuce was born.

Exemption from treatment

Exemption from treatment is a typical Macau lettuce dish. This simple dish is made with minced meat (beef or pork or a mixture of both) and seasoned with light and dark soy sauce (light and dark soy sauce), salt, pepper and crepe sauce (Worcester sauce). Meat must be sautéed over medium to high heat until loose and even. The cure is accompanied by potato chips, rice is served, or poached eggs can be added. The marmoted egg is related to the religious beliefs of the Macanese, and the egg yolk in the center of the egg white represents the color of the Holy See. In addition to pork and beef, the cure can also be flavored with fish fillets (preferably sea bass or grouper), chicken or other poultry, and other condiments, spices and ingredients such as shrimp paste, turmeric (turmeric) powder, bitter melon and plum vegetables.

Salted shrimp sour pork

This is a type of braised pork with salted shrimp paste and sauerkraut (tamarind) juice as a topping. Salted shrimp paste is made with shrimp paste as the main ingredient, marinated with Chinese wine or brandy and cloves, cassia seed cinnamon, black peppercorns, fragrant leaves (bay leaves), lemon and salt. After marinating, it needs to be left to stand for at least two to three months, and after full fermentation, it can become a fine salted shrimp paste. The rice balls that usually accompany this dish are made by adding lard and green onions, cooking, and then flattening and cutting into cubes.

Hodgepodge

Smorgasbord is a kind of mixed stew similar to Cozido à Portuguesa, which contains beef, pork and chicken, pig ears, dehydrated pork skin, Yunnan ham, sausage and duck. Smorgasbord is a flavorful dish that is usually found in winter, especially during The Christmas season.

Turmeric powder pork

This is a traditional Macanese lettuce, the name Bafassá is Macanese, a combination of Bafá (stewed) and Assá (grilled). Made with pork, it is preferable to use pork belly, pork legs or pork neck. If you want to have less fat, you can also choose pork tenderloin. The meat is seasoned with turmeric powder and salt, and then marinated in garlic sauce. When cooking, the meat is first placed in the pot and simmered, and then the meat is taken and baked until fully cooked when it is half cooked. This dish is served with potatoes (potatoes) cooked in gravy and rice.

Almond pine nut cake

Almond pine nut cake is a typical and very popular Macau dessert. A soft almond pine nut cake is a flourless cake made from almonds, olives or pine nuts, shredded coconut, cookie crumbs or a mixture of soy flour and eggs.
