method:
Squeeze out the teeth in the middle of the octopus, turn the head open, remove the internal organs inside, and wash the octopus clean.
Wash the pork belly skin and cut into small pieces.
In the pot, do not put oil, put the pork belly into the pan and fry, you need to fry while turning the pork belly over.
Fry the pork belly until the skin is slightly browned and the aroma of the meat is emitted, then stir-fry with rock sugar.
Add a little raw soy sauce and old soy sauce toning.
Add a small handful of peeled and washed garlic and stir-fry well.
After sautéing until fragrant, pour hot water, cover the pot and bring to a boil over high heat, then reduce heat and simmer for 45 minutes.
When the time comes, open lid and add salt to taste. Put the clean processed octopus in a pot and cook together.
Cook until the octopus is cooked thoroughly, turn the heat to collect the juice.
Out of the pan, sprinkle with a little chopped green onion to garnish.

Tips:
To make this dish, I didn't blanch the water, so try to choose a little fresh pork belly. After buying it, soak it in water for a while.
If there is a fresh octopus, use the fresh one, make it to taste better; like to eat a little chewy octopus, cook less for a while.
