Hui cuisine is composed of three local flavors: southern Anhui, yanjiang and yanhuai.
The flavor of southern Anhui is represented by local huizhou cuisine, which is the mainstream and origin of huizhou cuisine. Its main characteristics are: good at burning, stewing, pay attention to fire, and learn to use ham to accompany the taste, rock sugar to freshen, good at maintaining the original taste.

Along the river flavor prevails in Wuhu, Anqing and Chaohu areas, it is known for cooking river fresh, poultry, pay attention to knife work, pay attention to all kinds of colors, good at using sugar seasoning, good at braising, steaming and smoking techniques, its dishes have the characteristics of tenderness, freshness, freshness and aroma.
