Roasted tofu is a local famous food in Gaoping City, a household name, unique to Gaoping City, and declared as the intangible cultural heritage of Shanxi Province in 2008. In order to further tap the brand added value and development potential of Gaoping tofu, the Gaoping Municipal Government entrusted the Gaoping Municipal Catering Association to apply for the registration of the geographical indication certification trademark of "Gaopingyaki Tofu" to the State Intellectual Property Office. At the home of Master Shen Hongcai, the inheritor of the intangible cultural heritage of roasted tofu in Taniguchi Village, the staff carefully recorded the production process of roasted tofu, and conducted a detailed understanding of the various links of soybean selection, foaming, refining, initial screening, careful consideration, boiling, point brine, water filtration, pressing, baking, and accessories production in the production process, jointly discussed the protection of geographical indication trademarks and the promotion of brand value, and conscientiously compiled the management regulations for the use of the "Gaoping City Roasted Tofu" geographical indication certification trademark.
