Green tea is an unfermented tea and is the most produced tea in China.
According to the different process methods, it can be divided into 4 types, namely: fried green tea, roasted green tea, steamed green tea and sun-dried green tea.

1. Sauté green tea
The way to fry green tea uses a drum or a pot to fry, most of the green tea in China is fried green tea, fried green tea shape tight knot, green color, high aroma, soup color green bright, strong and refreshing taste. Includes long stir-fried green, round fried green and delicate fried green.
Long fried green is a long strip of fried green tea, the more famous are "Wu green fried green", "Tun green fried green", "Hang green fried green", "warm green fried green", "Xiang green fried green", "Yu green fried green" and so on.
Round fried green, the most important round fried green is bead tea, the shape is tightly knotted round, mainly for export, domestic sales are not much.
Tender fried green, all the fried green tea processed by picking fine buds and leaves belongs to the delicate fried green, also known as special fried green. All are famous teas from all over the world, with a variety of shapes and varieties, such as "West Lake Longjing", "Biluochun", "Liu'an Gua Slice", "Yuhua Tea", "Bamboo Leaf Green" and so on are all tender fried green.
2. After the fresh leaves of roasted green tea have been killed and kneaded, the dried green tea is roasted green. The roasted green tea has a complete appearance, dark green and oily color, high aroma, clear and bright soup color, and fresh taste.
According to raw materials and processes, it is divided into ordinary baking and delicate baking.
Ordinary roasting is generally used to make a variety of flower teas.
The more famous tender baked green are "Huangshan Maofeng", "Taiping Monkey Kui" and so on.
3. Sun-dried green tea
After greening and kneading, the green tea is dried in the sun. Sun-green tea has a coarse shape, dark green color and oily color, high aroma, bright yellow and green soup color, strong taste and alcohol, strong convergence, and can be transformed later.
Sun-dried green tea is generally made as a pressed tea for sale, and the more famous ones are "green brick" tea in Hubei and "Pu'er raw tea" in Yunnan.
4. Steamed green tea
Steamed green tea is steamed to make green tea, then kneaded and dried to make green tea. Steamed green tea has a fine and tight shape, needle-shaped, bright green color, clear soup color, light yellow-green color, fragrance, mellow taste or slightly astringent.
During the Tang and Song dynasties, the steaming process spread to Japan with Buddhism, and it is still used today, and Japanese steamed green tea is often made into matcha.
The more famous steamed green teas in China are "Enshi Yulu", "Cactus Tea", "Yang Envy Tea" and so on.
