The so-called fish noodles are the meat of fresh marine fish such as eels, small yellow croakers, and mackerels scraped out with a spoon, formed into small balls, sprinkled with sweet potato powder (sweet potato flour) and beaten with a thin stick to change positions continuously, until the fish meat is knocked into translucent flatbread, fried and cut into noodles, which is a good ingredient to accompany the meal. The color is crystal clear, the seafood flavor is strong, and it is suitable to use fish noodles to cook soup and stir-fry.

In Yuhuan, fish noodles are not only a home-cooked dish suitable for all ages, but also a unique local food symbol. In 2008, the fish noodle making technique was included in the Taizhou Municipal Intangible Cultural Heritage List, and the fish skin ravioli made from fish bread was selected into the "Zhejiang Farmhouse Specialty Snacks Top 100 List" in January 2021.
