Huaimao pickle is a side dish marinated with Baoding's unique sweet noodle sauce. Baoding has a folk proverb: "Baoding Province's three treasures, iron balls, noodle sauce, spring immortality." "Noodle sauce refers to the sweet noodle sauce produced by sauce manufacturers such as Baoding Huaimao Sauce Garden. Baoding Huaimao Sauce Garden was opened in the 10th year of the Qing Dynasty (1671). According to Professor Zhao Shouyi, a descendant of the Zhao family, the founder of Huaimao Sauce Garden, the Zhao family was born in Shaoxing, settled in Baoding during the Kangxi Dynasty, and built a Huaimao Sauce Garden shop under the ancient locust tree in the northeast corner of the erdaokou of West Avenue (now the intersection of Yonghua Avenue and West Avenue), and there was another venue for making sauce. The ancient locust tree is half exposed in the store, the trunk diameter is more than one meter, the branches are luxuriant, and the green shade shades the street, which has become a prominent symbol of the sauce garden.

In the early years of the Republic of China, the directly subordinate overseer Cao Kun was stationed in Baoding, Baoding industry and commerce became increasingly prosperous, Huaimao pickles also entered a heyday, Huaimao sauce garden and Beijing Liubiju sauce garden, Shandong Yutang sauce garden, Yangzhou Simei sauce garden and called the four sauce gardens, and has the reputation of "Baoding Huaimao in the north, Yangzhou simei in the south".
