Crispy crucian carp
Ingredients: crucian carp Onion Ginger Garlic Mint Onion Bell pepper Lemon Peppercorn Tempeh sauce Salt Chicken essence Corn starch White wine
method:
1. Wipe the crucian carp with white wine and wipe the inside of the fish belly with a towel;
2. Divide the crucian carp into two, chop into large pieces and pour into clean water;
3. Add fresh lemonade and soak for 3 minutes, then fish out the fish pieces;
4: Use green onion, ginger, mint and salt, catch the fish cubes and marinate for a while;
5: Do not put oil in the pot, add peppercorns, stir-fry over low heat until crispy, twist into minced;
6、 Add salt and chicken essence to the minced peppercorns and set aside;
7, pick out the small ingredients in the fish pieces, add corn starch, catch well, fry with oil for 90 seconds, re-fry for 90 seconds, fish out and spare;
8: Leave the bottom oil in the pot and sauté the minced pesto, minced onion, bell peppercorns and tempeh sauce;
9: Add the fish cubes, sprinkle with homemade pepper and salt and stir-fry, put on a plate and serve.
