Originating from the junction of northern Jiangsu and northern Anhui, the chicken is also one of the signature dishes of Anhui. The traditional earthen stove iron pot is matched with the sparks of the local black-footed ground chicken, which is called "ground pot chicken". The reason why the chicken in the pot has become a signature dish is that its delicious taste is not only manifested in the tender chicken nuggets, but also in the pan cakes on the pot.

[Ingredients]
Half a chicken (about 500 grams) | 150 g flour
Salt 5 g | 1 small piece of green onion white | Ginger slices to taste | Dried chili peppers to taste

Cooking wine 30 ml | Dark soy sauce 15 ml | Light soy sauce 45 ml
Oyster sauce 30 g | Arowana is thick and stupidly squeezed with cooked soybean oil to taste

Add 5 g of salt to the flour and mix well.

Slowly pour water in while stirring.

Knead the flour into a smooth dough without pimples and let the dough sit for 30 minutes. (The dry humidity of the noodles should be appropriate, and it is advisable not to stick to the hands.) )

Knead the dough, divide into 12 equal parts, roll each portion into balls and soak in water for a while.

Handle the chicken clean and chop into larger pieces. Blanch the chicken nuggets, remove and rinse.

Pour some Arowana into the pot and cook the bean oil and cook until 70% hot.

Stir-fry the shallots, ginger slices, garlic slices, dried chili peppers, fragrant leaves, peppercorns and star anise.

Pour in the chicken nuggets and stir-fry until the surface of the chicken skin is slightly yellow.

Stir in 30 ml of cooking wine, 15 ml of dark soy sauce, 45 ml of light soy sauce, 30 g of oyster sauce and an appropriate amount of salt and stir-fry evenly.

Pour in the unused ingredients, cover the pot and simmer over low heat for about 40-45 minutes.

Take out the small dough ball and flatten it, and then pull it directly by hand into an oval cake.

Paste half of the whole cake on the edge of the pot and half float on the soup, and paste the cake around the pot.
