However, chestnuts are not easy to store, and canned chestnuts (kernels) made by commercial aseptic processes not only solve the shortcomings of not easy to store, but also with their unique quality and taste, which are welcomed by the majority of consumers.

In order to improve the quality of canned chestnuts and ensure product quality and safety, recently, according to the document requirements of the Hebei Food Industry Association, the group standard of "Chestnut (Ren) Canned Food" led by Tangshan Liyuan Industrial Co., Ltd., Hebei Guanzhuo Testing Technology Co., Ltd. and other units proposed by the Hebei Food Industry Association has completed the formulation of the draft for comments, and will be fed back to the Hebei Food Industry Association before September 12, 2020.
The author understands that the group standard of "Chestnut (Kernel) Canning" clearly stipulates the terms and definitions, technical requirements, inspection rules, labeling, packaging and storage and transportation of chestnut (kernel) canned food. At the same time, it is also clearly pointed out that the scope of application of the standard is applicable to canned food made of chestnut or quick-frozen chestnut (kernel) as the main raw material, processed, canned (filling), sealed, heated and sterilized. Among them, it is required that the raw materials of fresh chestnuts should be fresh and clean, and the frozen chestnut kernels are in good condition.
Generally speaking, in the process of quick-freezing, if the freezing time and temperature control are not accurate, the moisture and juice of the processed quick-frozen chestnuts are seriously lost, and the freezing state is not good, which directly affects the flavor taste and processing quality of the canned chestnuts (kernels) in the later stage.
Nowadays, many enterprises use liquid nitrogen freezers for the product freezing process, the product is quick-frozen, the time is short, the quick-freezing is uniform, it will not cause moisture and juice loss, and fully lock the color, taste, texture or nutrients of the product.
Finally, taking into account the characteristics of chestnut (kernel) canning, process characteristics, process control and other factors, combined with the national sampling situation, in order to further improve the quality of chestnut (kernel) canned food. The group standard of "Chestnut (Kernel) Canning" clearly stipulates the factory inspection items, including sensory requirements, soluble solids content, solids, commercial sterility, and net content, providing a strong project inspection basis for ensuring the quality and safety of chestnut (kernel) cans.
