In order to protect and inherit the ethnic and folk handicrafts of Ludian County, promote ethnic unity and the development of ethnic minority culture, enhance national self-confidence, consolidate the foundation of local economic and cultural development, and better protect and inherit the traditional culture of ethnic minorities, on January 14 and 15, Ludian County held a rescue and protective training on the production process of Hui traditional food in Xiaochong Community of Wenping Town, and more than 150 trainees from Wenping Town and other townships participated in the training.
Ludian County has a Hui population of 82,600 people, accounting for 17.21% of the total population of the county, accounting for 80.90% of the county's ethnic minority population, mainly distributed in Wenping Town, Taoyuan Hui Township and Ciyuan Hui Township and other townships, Hui traditional culture is rich. Traditional Hui cuisine such as glutinous rice dumplings, bean food, soba noodle soup, maltose, peanut candy and other traditional foods are loved by the people of all ethnic groups, and the traditional production process is exquisite. However, with the progress of economic and social development and modern science and technology, the hui traditional food production process is gradually disappearing, in order to strengthen the rescue and protection of the hui traditional food production process, it is imperative to carry out the training of the Hui traditional food production process to rescue and protect. In addition, many Hui women are difficult to find stable employment channels because they do not have a skill, and after carrying out training in the production of traditional Hui cuisine, more Hui women can master a skill and further broaden the employment channels.

The training was sponsored by the County Minzong Bureau of the United Front Work Department of the Ludian County CPC Committee and undertaken by the Wenping Town Party Committee and government, and the Xiaochong Community Residents' Committee; the training was carried out in conjunction with the overall idea of "cultural Ludian" construction and the creation of a national ethnic unity and progress demonstration county put forward by the Ludian County CPC Committee and government, and was conducted in a way that combined theoretical lectures with practical operation. The masses who came to learn the skills of making food showed great interest in the training of traditional Hui cuisine, and everyone said that after learning and mastering the traditional food making skills, they should combine their own actual conditions and carry forward the special gastronomic skills of ethnic minorities.

Huang Tiancai, a Han resident of Xiaochong Community Group 4, usually especially likes Hui traditional food, and after learning the news that Ludian County is going to hold a rescue and protective training for Hui traditional food production processes in Xiaochong Community, she was particularly excited and actively signed up for this training. Combined with the fact that Xiaochong Community is a provincial-level party building and ethnic unity double promotion demonstration community, the actual situation of the rapid development of rural characteristic tourism in recent years, Huang Tiancai, who has mastered the traditional Food Making Skills of the Hui Nationality, is preparing to choose to open a national specialty restaurant in his hometown, relying on traditional food production and operation to open up employment channels and increase family income.

I am XiaoChong's authentic Han nationality, through this food training of the Minzong Bureau, let me learn some of the Hui food production methods, such as glutinous rice soup, soba noodle soup, cold powder, these I have learned, now XiaoChong here is developing rural tourism, I can use these skills I learned in our hometown can set up a stall to do business, and there is no need to go out to work.
It is understood that in order to ensure the smooth development of the 2020 ethnic culture protection project in Ludian County - Hui traditional food production craft training and rescue protection work, the Ludian County Minzong Bureau set up a project leading group, formulated the "Ludian County 2020 National Culture Protection Project - Hui Traditional Handicraft Training Rescue and Protection Implementation Plan", hired folk artists as teaching teachers, purchased cooking utensils, ingredients, etc. required for organizing training, and strengthened the supervision and performance evaluation of project funds to achieve special funds.
After the training, Ma Dian, member of the Standing Committee of the county party committee, director of the United Front Work Department of the county party committee, secretary of the Political and Legal Committee, Cai Shouyi, member of the standing committee of the county party committee and secretary of the party committee of Wenping Town, and the heads of relevant departments such as the unified station department of the county party committee and the county civil and religious bureau jointly issued certificates of completion to the qualified trainees.
During the training, relevant departments strengthened epidemic prevention and control. The staff of the county cultural and tourism bureau gave a lecture on the inheritance and protection of the traditional culture of the Ludian Hui people, and carried out the interactive knowledge grabbing activity of "beautiful countryside trip, love and health participation".
